About Suadero Tacos
To talk about suadero tacos is to talk about tradition. It's a very popular dish in Mexico, and within the world of tacos, it's, along with tacos al pastor , a classic at street stalls. Suadero tacos are distinguished by being made with a special beef, known as suadero , which is characterized by its soft texture and pronounced flavor.
Suadero is a meat cooked in its own juices, with a touch of oil and, in some cases, a bit of lard. This cooking method is what gives it the juiciness that makes suadero tacos so irresistible. They're also typically served with onion, cilantro, salsa, and, of course, a good dose of lime, which adds that acidic touch that perfectly complements the flavor of the meat.
Essential information about the Suadero
To understand the magic of suadero tacos , it's essential to know what suadero is and where it comes from. Suadero is the part of the beef that lies between the skin and the muscle, specifically the area that covers the ribs and belly.
To know what type of meat suadero is, we can say that it is a cut of beef that has a perfect balance between lean and fat, making it ideal for cooking slowly in its own juices.
The name "suadero" comes from the word suado ( sweated ) , which refers to the traditional cooking method for this meat. Suadero is cooked "suando," meaning simmered in its own juices and fat , which gives it the tenderness and special flavor that is embodied in suadero tacos.
How to marinate Suadero for tacos?
Marinating the meat for suadero tacos allows the flavors to penetrate and intensify during cooking. The basic marinade typically includes ingredients such as garlic, onion, oregano, orange juice, vinegar, and a blend of dried chilies .
The process is simple: mix all the marinade ingredients in a large bowl, add the suadero meat, and cover it with the liquid, letting it rest in the refrigerator. The longer you let the suadero marinate, the deeper the final flavor will be.

What's in suadero tacos?
Suadero tacos are more than just meat and tortilla ; they're a harmony of ingredients that complement each other to create a perfect bite:
- Suadero meat : The undisputed star. The meat must be well cooked , juicy, and slightly crispy around the edges, thanks to the final touch on the grill.
- Corn tortilla : These tortillas, which are also used in many tacos, such as tacos de canasta , have just the crunch and firmness to contain the moisture of the suadero.
- Onion and cilantro : These two ingredients provide freshness and a contrast of textures and flavors that balances the juiciness of the suadero.
- Salsa : Depending on your taste, you can choose different types of salsa, such as pipián or salsa macha . The important thing is that the salsa complements and doesn't overpower the flavor of the suadero tacos.
