Flour gorditas, a Mexican delicacy
Introducing the flour gorditas
A flour gordita is a traditional Mexican dish that has become a favorite both in Mexico and around the world.
It is a corn flour dough that is mixed with water and other ingredients, such as salt and butter, to form a soft, malleable dough.
This dough is divided into portions that are flattened into a disc shape and then cooked on a hot griddle or in a pan until they acquire an appetizing golden brown on both sides.
The flour gordita takes its name from the word “gordita,” which means “little fat girl” in Spanish, due to its round, plump shape.
What makes flour gorditas especially appealing is their versatility. They can be filled with a wide variety of ingredients, ranging from pressed pork rinds, stewed beef , and picadillo (ground beef), to cheese and refried beans , giving them a wide range of flavors and options.
Pre-Hispanic origin of flour gorditas
Flour gorditas are a traditional Mexican dish whose origins date back to pre-Hispanic times.
Their invention cannot be attributed to a specific person, as they are an integral part of Mexico's culinary heritage and have been prepared and enjoyed by generations throughout history.
In pre-Columbian times, before the arrival of the Spanish in Mexico, indigenous peoples were already making corn-based foods, such as tortillas and tamales.
- Gorditas, made with corn dough , represent a natural evolution of these preparations.
Over time, they diversified and were filled with different ingredients, giving rise to the various varieties of gorditas we know today, whether filled with pork rinds, meat stews, cheese, or sweet ingredients.
The version for those with a craving: sweet flour gorditas
When we talk about sweet flour gorditas , we're entering the world of dessert options. These gorditas are sweetened with sugar and often have cinnamon added to enhance their flavor.
They can be filled with sweet ingredients such as cajeta (a typical Mexican dulce de leche), homemade jam , chocolate mousse , or even fresh fruit.
Sweet gorditas are ideal for satisfying cravings for something sweet and comforting.
As for recipes, there are many variations of sweet flour gorditas. The basic ingredients include corn flour, water, and salt.
The dough is mixed until a smooth consistency is achieved and then divided into portions that are flattened into thin circles.
They are then filled with the sweet ingredients of your choice before being deep-fried until golden brown and crispy.

- In a large bowl, combine the cornmeal, salt, and shortening and mix well. Gradually add the warm water, kneading until you have a soft, manageable dough.
- Divide the dough into small portions to form golf balls. Take one and place it between two sheets of plastic wrap or waxed paper.
- Using your hands or a rolling pin, flatten the dough until it's about 1/4 inch thick and shaped like a disk. Repeat with all the dough balls.
- Place the filling in the center of each dough disc. Fold it in half, covering the filling, and press the edges together to seal.
- Heat enough oil in a large skillet over medium heat. Add the gorditas and fry for 3-4 minutes on each side.
- Once they are golden brown, remove them from the oil and place them on absorbent paper to remove excess fat.
