Where does the name Tacos de Canasta come from?

Tacos de Canasta get their name from the way they're presented and stored. The word "canasta" refers to the wicker or plastic baskets in which these tacos are placed for presentation and transport.

  • After being prepared and steamed, the tacos are layered inside these baskets, allowing them to retain their heat and moisture, contributing to their soft and juicy texture.

This practice of presenting them in baskets makes them easy to sell on the street and transport, making them a convenient and popular option for Mexican street food . The term "Tacos de Canasta" highlights not only their presentation, but also the tradition and practicality associated with this delicious culinary specialty.

Let's see how Tacos de Canasta are made.

Also known as steamed tacos , these are a delicious specialty of Mexican cuisine. The preparation of these tacos is the same as the traditional taco recipe ; they begin with corn tortillas steamed with a lard mixture.

They're then stuffed with stews like potato and chorizo, beans, or pressed pork rinds , before resting in baskets to absorb the flavors and retain their succulence. This unique preparation process gives them a moist texture and infused flavor.

This preparation method gives them a unique softness and juiciness, as they are left to rest in the hot basket for a while, allowing the flavors to blend and the tortillas to absorb the juices from the filling.

Basket Tacos Recipe

Yield : 12 portions

Preparation time : 2 hours 30 minutes

Ingredients

  • 2 cups of corn flour for tortillas
  • 1 1/2 cups of lard
  • 1 cup of water
  • Salt to taste
  • Filling of your choice (potato with chorizo, beans, pressed pork rinds, etc.)

5 easy steps to the best Tacos de Canasta

  1. In a bowl, mix the cornmeal with the melted lard and salt. Gradually add the water until a soft, malleable dough forms. Let it rest for 30 minutes.
  2. Divide the dough into small portions and form into walnut-sized balls. Roll each ball out to a thickness of approximately 2 mm, which is ideal for maintaining the tortilla's strength during filling and baking.
  3. Place a portion of the filling in the center of each tortilla. Fold the tortilla in half, making sure to seal the edges well.
  4. Place the tacos in a steamer so they're not stuck together. Steam for 20 minutes or until cooked through and juicy.
  5. Cover the tacos with a thick, clean cloth immediately after removing them from the steamer and before placing them in the basket. This will help soften them by absorbing residual steam. Let them rest for at least 30 minutes, then serve with salsa, onion, cilantro, and lime to taste.
