Hello beautiful community of Paulina Kitchen! Today we want to propose a different breakfast, for those who are encouraged, start the day with some " divorced eggs ." We are not making jokes about their marital situation, or anything like that, these eggs, traditional in Mexico, are a very occurring way to serve fried eggs . Two fried eggs, red sauce and green sauce. Opposite poles that attract and mix in your mouth.

In this note we are going to tell you all about this super easy recipe, the possible combinations, something about their origin and why of your name. We also leave the instructions to prepare the red sauce and the green sauce and, as always, a recipe step by step to make the eggs divorced at home and start the day with a lot of color and flavor.

What are divorced eggs? 

Divorced eggs are a typical Mexican dish that consists of two fried eggs , also called "crashed" , covered with two different sauces: a red sauce and a green sauce . In Mexico it is a very popular dish that is customary to enjoy at breakfast.

The red and green sauce represent a “divorced” , which is no longer together, hence their name. Each egg is placed on one side of the plate, usually separated by a mound of beans (beans) refritos or rice. This presentation symbolizes the separation of the couple and creates a visually striking and fun appearance on the plate.

Divorced eggs are an emblematic dish of Mexican cuisine that combines intense and contrasting flavors. His visually striking presentation and his symbolism of the separation of a couple make him an interesting and very delicious option.

How are Mexican divorced eggs?

Divorced eggs are an explosion of flavors and colors. Each egg is fried, with the slightly liquid yolk, which allows it to be mixed with the sauces when eating it.

The red sauce is made of tomato, onion and chile while the green sauce is made with tomatillos (small kind of green tomato, with acid and sweet flavor), Chile and coriander. The red sauce provides a spicy and smoked taste, while the green sauce offers freshness and an acid touch.

Why are they called divorced eggs? 

The name is a metaphor that represents the separation of a couple. When placing the separate eggs on the plate, each covered with a different sauce, the rupture of that union is symbolized. This fun and creative denomination gives a special touch to the dish and has contributed to its popularity in Mexican cuisine.

Although there is no exact story about the origin of divorced eggs, it is believed to be a derivation of rancher eggs , which are similar, but prepare on an omelet and only with red sauce.

It is also believed that these eggs were created by workers who were looking for alternatives for a breakfast full of energy that allowed them to face their extensive working days. 

Divorced Rancheros Eggs: A marriage that works

Rancheros eggs and divorced eggs are two dishes that share certain similarities but also have distinctive differences. Both dishes are based on fried eggs and are very popular in Mexican cuisine.

  • The rancher eggs are fried eggs that are served on corn tortillas and are covered with spicy tomato sauce. In addition, they are usually accompanied with beans (beans) refritos, cheese, avocado and cream. It is a traditional and abundant breakfast, very common in Mexico.
  • On the other hand, divorced eggs are also fried eggs, but they differ by being covered, as we said before, by two different sauces: a red sauce and a green sauce and each egg is placed on one side of the plate.

Of course, elements of both dishes can be combined and the so -called "divorced rancher eggs" . This variant fuses the concepts of rancher eggs and divorced eggs to obtain a super rich combination.

How to prepare divorced rancher eggs

recipe of divorced eggs is simply followed and two corn tortillas are placed on a plate, previously heated, and above the crashed or fried eggs, covered, one with red sauce and another with green sauce.

How are the sauces of divorced eggs prepare

For red sauce

  • Cut 3 tomatoes in rooms and place on a barely oiled pan, along with ¼ onion and 1 clove of garlic. You can add Chile, to give it a spicy touch.
  • Cook until the ingredients are golden. Remove and let cool. Then blend or process, adding water if necessary and salt and pepper to taste. You have to keep a gentle and homogeneous consistency.

For green sauce

  • Peel 4 green tomatillos and wash them. Place them in a small pot with ¼ onion, 1 clove of garlic and, optional, 1 Serrano Chile. 
  • Ubrir with water, bring to boil and cook over medium heat for 10 minutes until the tomatoes are soft. Remove from water and let cool. Then liquefy or process all the ingredients. Add chopped coriander and salt and pepper to taste. 

Divorced eggs with chilaquiles

A popular variant of divorced eggs is to serve them on a bed of chilaquiles , another iconic Mexican dish. Chilaquiles are fried corn tortillas (such as Mexican totopes or nachos ) and cut into triangles, cooked in red or green sauce.

By combining divorced eggs with chilaquiles , an even more intense flavors and textures are created. Chilaquiles provide a crunchy base that contrasts perfectly with the softness of eggs and sauces.

How to make divorced eggs step by step

  1. Prepare the red and green sauces following the recipes explained above.
  2. In a pan with a little oil, cook fried or crashed eggs at ease.
  3. Place two eggs on each dish. They can be separated by a mound of beans (beans) refritos or rice, or serve that accompanying separately.
  4. Pour the red sauce on one of the eggs and the green sauce on the other. Serve hot and enjoy!
