The recipe I'm going to give you is for simple potato croquettes . They can be made in different sizes, and you can vary the filling ideas. Or you can leave them unfilled. They can also come in different shapes.
Today I made round shapes and placed them on skewers . This is to tempt Coquito, of course.
I called them papa pops .
Papa pops is a name that seems a bit snobby to me.
It reminds me of cupcakes (I HATE cupcakes , magdalenas cipayas). But I decided to use it anyway. Because I realized it's a name that hides a huge vulgarity that I find very funny.
So I imagined that my potato croquettes would become famous and that at the Ambassador's receptions, before the Ferrero Rocher, they would serve potato pops .
papa pops are so delicious , Mr. Ambassador." And I rubbed my hands together, thinking, "They're saying 'papa popsicles!'" "You idiots!"
Coqui liked them, by the way.
Ingredients

- 2 Popes
- 1 jet of milk
- 1 CDA. of butter
- 1 egg
- Garlic and parsley
- Breadcrumbs
- Fresh cheese
- Salt
- Oil
How to make potato croquettes

1) Boil the potatoes and mash them with the butter and milk. Season with salt and pepper. It should be a firm mash, so don't add too much milk. Refrigerate the mash as much as possible, as it will firm up. A day-old mash will also work, as it always has the ideal firmness for these things (which was the case with me).
2) Beat the egg, add salt and garlic and parsley.
3) With the chilled puree, make small balls, canyons, or any shape you prefer, placing a small piece of cheese in the center, as shown in the photo. You can also add a little flour to the puree or an egg yolk to make them firmer. I like them plain because they end up very soft. The secret is to keep the puree very cold.
4) Dip the balls in egg and coat with breadcrumbs. Repeat until they are well sealed on the outside.
5) Fry in very hot oil, turning them over when they're golden brown on one side. Fry quickly, otherwise the croquettes will split and the cheese will ooze out. So be careful, hold the side of the pan at all times.
6) For the popsicles, simply carefully insert a stick halfway through. I thought it was a very friendly idea, not only for high-society gatherings, but also for a child's birthday party.

Assemble the croquettes and coat them in flour.
Then, put them in the freezer.
When you take them out, coat them in egg and breadcrumbs and fry them in a small farro-type container. Cook them in two or three places.
