Today: lemon squares!
A saying goes that “if life gives you lemons, make lemonade.”
All well and good with the wisdom of past generations who summed up the philosophy of life in that saying, but... anyone can make lemonade. It's true, sometimes we're waiting for some strawberries, a watermelon, or a good pear, and we get a crate of lemons. And we're not going to go around screwing up our faces with every bite of the lemon.
It's wise to accept what we're dealt in life, but it's even wiser to mix what we've been dealt with butter and sugar and make something sweet for our tea. If life gives us lemons, luckily we have thousands of things to do, and much more fun than lemonade. Mind you! I have nothing against a nice, fresh lemonade, but a few lemon squares... that's taking what you've been given and making it supreme, eh!
Some believe that all the lemon recipes we have today came from this simple saying. They say it was the desire to surpass lemonade that led to the expansion of the lemon imagery.
This is how lemon pie, lemon ice cream, lemon pie recipes , brownies , lemon cookies, lemon torpedo (my favorite!), lemon peels with chocolate, etc.
And among so many inventions and so many lemons, we come to today's incredible recipe, perhaps the most supreme expression of all this: lemon squares.
I assure you that after this, you will beg life (and the greengrocer) to give you lemons!

For all of you who are already thinking that these are similar to the ones that come in a box, I'm telling you right now, "NO!" These lemon delights are much richer and more delicate.
And for those who say, "But in the photo, they're diamonds!" I'll tell you right now, "We cut them however we want." They can be lemon squares, or diamonds, or hexagons, or pentagons, or whatever geometric shape you can think of.
The best thing about these lemon squares is that the dough is crispy and sweet, while the filling is super creamy and has that acidic note provided by the citrus.
Can we make them orange? Of course! Try them and tell me later.
Now, without further ado, let's get to the recipe!

Ingredients
for a 24cm mould
Mass
65g of Sugar
100 g Butter
175 g 0000 Flour
Stuffed
3 eggs
135g of sugar
Juice of 2 lemons (70cc approx)
1 lemon zest
80 cc of cream
Powdered sugar for sprinkling
Lemon Squares Recipe
or however you want to cut them
For the dough
- Preheat the oven to 170°C (medium to low). In a bowl, mix the butter and sugar until soft. Add the flour and combine.
- Roll out the dough and place it in the pan, covering the bottom and sides well. Bake for 10 to 15 minutes. Don't bake it completely yet. Remove from the oven and let it cool.
For filling
- Preheat the oven to low. In a bowl, beat the eggs and sugar until smooth.
- Add the lemon zest and juice, and the heavy cream. Mix everything together without beating too much and place on top of the pre-baked (and cold!) dough.
- Bake the lemon squares in the oven for at least 25 minutes or so.
- Once they are cold, sprinkle with powdered sugar and cut into squares.

The filling is runny... 15 minutes and it's still runny! What happened? Did you have to whip the cream first?
