Everyone thinks the key is the chocolate, but the real key to a great brownie is respecting the baking time and temperature . Unlike baking a cake, where we want it to "puff up," when making a homemade brownie, we want the exact opposite: a more compact dessert so it's moist!

You can take it out moist in the middle or rather dry, it depends on your taste. I recommend taking it out halfway moist; after all, you can always put it back in the oven. If you overcook it, you've overcooked it, and there's no turning back!

  • 100gr of butter
  • 150g of chocolate
  • 2 eggs
  • 1 cup of sugar
  • 1/2 cup of chopped nuts
  • 100g of flour

How to make chocolate brownie

  1. To begin our chocolate brownie recipe, we'll place the chopped butter and chocolate in a pan and heat it over very low heat . We'll cover it and let it sit undisturbed for about 5 minutes. Trust me!
  2. Now remove from heat and stir the ingredients until everything is melted and integrated.
  3. Separately, we will beat the 2 eggs with the sugar until they are very white , this is key to making the homemade brownie very moist.
  4. Add the melted chocolate and whisk until combined. Add the nuts, roughly chopped or whatever you prefer.
  5. Add the sifted 0000 flour in two parts and mix everything together as shown in the video. It's important to whisk thoroughly before transferring the chocolate brownie to the pan.
  6. Place on a baking sheet and cook in a hot oven (200-220°) for 20 minutes.

The temperature is 220ºC. 1 cup of granulated sugar is approximately 100 g.
As a reference, to make cakes, the base mix is equal parts by weight of the 4 basic ingredients: egg, flour, sugar, and fat. 1 egg is approximately 40 g.

This recipe is amazing. I made it a while ago and now I'm going to make it again. For those asking, I used a rather large Pyrex-type glass mold, so I increased the quantities of everything by 50% (the mold measures approximately 33x22 cm). I also substituted some ingredients:
Butter for Coconut Oil (150g);
0000 Flour for Superfine Organic Whole Wheat Flour (150g);
White Sugar for Brown Sugar (a cup and a half, approximately 300g).
And it turned out really great.

I made it a few weeks ago and now I have it back in the oven. A crazy brownie. If it's too thick, I add a splash of milk. It should be thick, but if it's kind of thick, a splash of milk is fine.

I baked twice as much in a 30x40cm baking dish at the lower middle of the oven, 220°C, for 20 minutes, and that was plenty. It burned a little on the edges and top. I'm sorry, but I'm sharing it because I think it might help. Next time I'll bake it for 15 minutes. I think the size of the pan is crucial for the thickness.
