How do you eat during Holy Week?

It's well known that there's a certain custom adopted by all Christians, and during Holy Week, they choose not to eat meat. For this reason, some people choose to eat fish or shellfish , in addition to the "typical" eating of vegetables and greens typical of the holiday. Some people incorporate this custom throughout the week, but most do so especially on Good Friday .

We must clarify that the dishes historically associated with these dates are also eaten throughout the year. But beyond this, there is a certain family and cultural celebration that involves the preparation of certain dishes and desserts.

Lenten Empanadas

Lenten empanadas recipe

First, let's talk about this dish, considered by many to be the richest part of Holy Week. It's a product based on the religious restriction on eating beef or pork during certain days of the holiday. Hence its name, Vigil empanadas .

There's no reason to restrict these flavors to the rest of the year. However, empanadas and fish cakes are only available in Argentina during Easter. It's a mystery of Argentine gastronomy.

Ingredients

(for a dozen Lenten Empanadas)

  •  2 tuna cans
  • 1 chopped tomato
  • ½ chopped red pepper
  • 1 chopped green pepper
  • 1 chopped onion
  • 2 cooked eggs
  • 1 chopped leek
  •  2 Cditas. of paprika
  •  1 pinch of salt
  •  1 pinch of pepper
  •  12 empanadas tapas

How to make Lenten empanadas step by step

  1. Open the tuna cans and remove the liquid. If it is tuna in oil, you can take advantage of the oil and put it to heat in a pan.
  2. When the oil is hot, sauté the chopped onion and the leek. If necessary, a little more oil can be added so that these ingredients do not burn.
  3. Once the onion is transparent, incorporate the red pepper and the green pepper. Continue cooking. Add salt and pepper to taste.
  4. Finally add the chopped tomato when the peppers are tender and sprinkle paprika to taste (sweet or spicy). Cook one more minute and add crumbled tuna and chopped cooked eggs.
  5. When the filling is ready, let it be a bit.
  6. To assemble them, grab a empanada lid and place some mixture in one of the halves, close it and seal the edges with a fork. Repeat this step to fill all empanadas.
  7. Frigues can be cooked in plenty of oil or baked. To make them in the second way, bake for 15-20 minutes with the preheated oven at 180 ° C.

Cod with chickpeas

Cod with chickpeas

Secondly, a traditional dish that is disappearing from Argentine culinary culture is cod stew with potatoes and chickpeas. Its high calorie content, the high cost of its ingredients, and the fact that Easter in the southern hemisphere falls just after the end of summer are likely the main causes of this gradual disappearance of this traditional and nutritious dish.

In this case, there's no justification for not preparing it during the cold winter days. However, most stores don't sell cod outside of Easter.

Ingredients

  • 200 g of chickpeas
  • 200 g. Desalted cod
  • 500 ml of fish stock or fumet
  • 150g. fresh or frozen spinach

  2. Cut the cod fillets. Chop the spinach and set aside. Prepare a fish stock by cooking the fish bones and heads.
