Yes, you read that right, we're going to test whether we can make a cake with Coca-Cola and, above all, see how it turns out and what it tastes like! There are many recipes for this Coca-Cola cake online, and I was very intrigued to learn what the Coca-Cola adds to the taste and texture of the cake.
Like every episode of #mayfail, we're going to follow the recipe, but it might fail. It's almost a game of Russian roulette. Well, not really. Some great things have come out, and some things have gone terribly wrong.

About this Coca-Cola Cake Recipe
As we mentioned before, there are many recipes for Coca-Cola cakes. They all generally use the same amount of Coca-Cola, and the main difference is the rest of the ingredients and proportions.
Paulina chose one that most resembles the cakes and puddings she makes, and she knows it turns out well regardless of whether it has Coca-Cola in it or not.
It's a very spongy cake and has a hint of the Coca-Cola lollipops they used to sell when I was a kid, and now I don't even know if they exist anymore because the dentist banned me from eating them. #DivineOldTreasure
Spoiler alert! The cake doesn't fail, it's actually delicious.
The texture is interesting, but surprisingly, it's not very sweet. I don't know if the sugar in the coca is caramelized, or if there's simply too little added sugar, but as you can see in the video, it's lacking in sweetness. Hence the dulce de leche.
You can try adding a little more sugar, see what happens, and then tell me.

for a small Coca-Cola cake
- 3 eggs
- 1/2 cup of sugar
- 1/2 cup of oil
- 2 flour cups 0000
- 1 cdita of baking powder
- 2 tbsp of bitter cocoa
- 1 cup of Coca-Cola

- In a bowl, beat the three eggs. Once beaten, add the sugar and beat until pale and creamy. This is the famous letter stage; you can see how it turns out in the video. It will give our Coca-Cola cake a lot of air.
- Add the oil and lemon zest. The online recipe didn't include lemon, but I thought it would be a great flavor to add to the Coca-Cola.
- In a separate bowl, mix the flour, cocoa powder, and baking powder. Sift the dry ingredients into the egg mixture three times to combine everything.
- Once everything is combined, add half a cup of Coca-Cola. You'll notice it takes a while to combine with the previous mixture, but don't worry, with a little patience it will come together. Add the remaining Coca-Cola and finish mixing.
- We transfer it to a greased and floured pan and bake at 180° for about 40 minutes, or until a toothpick inserted into it comes out clean.
You can serve it with dulce de leche
because everything is better with dulce de leche!
Paulina, Coca-Cola's ingredients include coffee, vanilla, lemon, cherry, and orange (I owe you ingredient X). Flavored Cokes (e.g., Cherry Coke) just have more of one of these flavors. If I substitute instant coffee for chocolate instead of chocolate, is that crazy, or do you think it could work as a substitute?
It's very simple. Coca-Cola has burnt sugar, so the bitterness is more pronounced than the sweetness on the palate.
