How to make a step -by -step birthday cake

Here's how to make the birthday cake I made for Lucía Inés a few months ago. It's not simple, nor does it require a few ingredients. It's actually rather complicated to make, with many steps, but Lucía Inés deserved it, so here's the recipe for a special day. Making birthday cakes doesn't have to be complicated; we'll make it easy!

The taste? Spectacular. Not even a crumb was left.

Birthday Cake Recipe

Ingredients

  • 2 cups of lift flour (or common flour + baking powder)
  • 3/4 cup neutral oil (sunflower or corn)
  • 1 cup of sugar
  • 3 eggs
  • 150g of semi-sweet chocolate
  • 1 splash of coffee
  • 3 tbsp. of bitter cocoa
  • 1 jet of milk
  • 1 handful of chopped almonds

Birthday cake step by step

  1. Melt the chocolate with a splash of coffee in a double boiler and set aside.
  2. Beat the eggs with the sugar until they look white.
  3. From now on, we won't be using a mixer (you could have used it in the previous step). Add the first cup of flour and mix.
  4. Add the oil and mix. Then, stir in the chocolate and cocoa powder . Mix well.
  5. Add the last cup of flour , the splash of milk and mix.
  6. Separate the mixture into three equal parts. We'll bake them separately because the birthday cake won't have frosting on the sides, so we want the edges to be even and not look like a sliced .

  8. Bake each part of the birthday cake at minimum (the oven must be preheated) for 20-25 minutes.

The Birthday Cake Filling

Filled with dulce de leche and nuts

  • 4 tbsp. pastry dulce de leche
  • 2 tbsp. of butter
  • 1 handful of nuts

softened butter dulce de leche vigorously . Add the walnuts and refrigerate until ready to use.

Filled with butter and cream

  • 1 pot of cream (250g.)
  • 1/2 tbsp. sugar
  • 2 tbsp. Dulce de Milk
  • 100g of butter

Whip the cream with the sugar until stiff. Add the dulce de leche and mix. Add the mantecol . Refrigerate until ready to use.

The topping (Chocolate ganache)

  • 1/2 pot of cream
  • 100g of dark chocolate
  • 1 pinch of salt
  • 1 cdita. of butter
  1. Chop the chocolate and set aside in a bowl.
  2. Bring the cream to a boil. Be careful not to let it boil over.
  3. Remove from heat and stir in the butter and a pinch of salt . Stir until the butter dissolves.
  4. Pour the cream over the chocolate (not the other way around) and let it sit for 5 minutes. After 5 minutes, stir gently until well combined. The mixture will be super shiny and chocolatey. You can see more detailed instructions here: How to Make a Chocolate Ganache .

Assembling the Birthday Cake

To moisten the birthday cake we use:

  • 3 tbsp tequila
  • 5 tbsp. of water
  1. To assemble it, choose the prettiest part of the cake and place it on top. We'll even out : cut with a knife until they're perfectly flat on top. I placed the layer with the almonds in the middle, but I think the most important thing is choosing which one will go on top.
  2. Mix the tequila with the water and lightly moisten the first layer. Add filling 1, placing a spoonful in the center and then on the sides. It's important to have plenty of filling on the sides of the birthday cake because since we won't be adding frosting, the idea is for the filling to poke through, not leave a hollow. Spread the filling all over the cake, always being careful not to spill over the edge.
  3. Place the next layer and press lightly. LIGHTLY, right? If you mess up at this point after all that work, you'll start crying.
  4. Moisten with tequila and add, in the same way, filling 2. Place the next layer and press down a little.
  5. Pour the chocolate frosting from the top and into the center of the cake. Do not move or touch it at any time. The frosting will drip off on its own and form a perfect, smooth, and shiny film. Refrigerate until ready to eat. Happy Birthday!

It turned out great! I used it to make a Number Cake and it turned out great! Since it's not a very fluffy cake, it worked out great for that occasion. I'm making it again today! It's delicious and super easy!

Hello. Great recipe! Question: Why do you add butter to the dulce de leche filling? To give it firmness? I want to make this cake for my daughter, who's turning 5. Ignoring the tequila... ;)
