Welcome to Paulina Cocina! Or should I say Paulinina Cuccina! (read with an Italian accent) because today we're delving into pasta recipes, and the Italian flavor is everywhere!
There are many classic pasta recipes on this website, and they're all delicious and incredible: pasta with carbonara sauce , or one-pot pasta ! But today Paulina wanted to bring you something a little more express, so that time constraints don't take away from the opportunity to make a good pasta.
Maybe it's because there are so many Italian descendants in Argentina, or maybe we discovered that pasta was almost essential for family gatherings like barbecues. The fact is, we all enjoy a good plate of pasta. And what better way to have some great pasta recipes on hand than with the ones only Paulina could offer!

About these quick and easy pasta recipes
Ah! The hectic life of the 19th century doesn't give us time every day to send each other one of those stews that our grandmothers started cooking at 7 a.m.
Luckily, you don't have to get up early with these pasta recipes. They're ready in seconds!
The first is a cold pasta , ideal for a quick and light lunch that will fill you with energy without making you drowsy! You can have the cooked noodles in one container and the cold sauce in another. Everything's ready in the refrigerator, ready to go, mix it up, and be happy!
The second, my personal favorite, is a pasta with a tomato pesto (can you say “pasta with pesto pasta with pesto” enough times without stuttering??!)
Sundried tomato pesto has a very unique taste and is delicious with any type of pasta! You can make more than the amount indicated below and keep it in a small jar in the refrigerator. Spread it on toast with a drizzle of olive oil on top—it's heaven. HELLO!

Ingredients
for cold pasta
- 1/2 package of dry noodles (preferably spaghetti)
- 1 tomato
- 1 handful of basil
- olive oil
- garlic
- olives
- salt and pepper
for pasta with pesto
- 1/2 package of dry noodles (preferably spaghetti)
- 100g of dried tomatoes
- 1 handful of basil leaves
- 2 tbsp grated Parmesan
- olive oil
- walnuts and almonds, a handful
- salt, pepper
Pasta Recipes No. 1
Cold pasta
- We are going to cook the pasta, in this case spaghetti, as indicated on the package and we take it out al dente.
- Now we'll chop the tomato into very small cubes. Place it in a bowl and add the clean basil leaves, the finely chopped garlic, and the halved olives (or capers, for example).
- To our mixture we add a splash of olive oil (or whatever you like best) a little salt and mix well.
- Pour almost all of the mixture over the cooked, fresh noodles and mix well. Serve on a plate and top with the remaining tomatoes. Voilà!
Serve with lots of pepper
and a splash of olive oil!
Pasta Recipes No. 2
pasta with sun-dried tomato pesto
- The first thing we're going to do is soak the sun-dried tomatoes in warm water with a little balsamic vinegar . We're going to let them soak until they soften (if you want to speed up the process, give them a little heat).
- Once the tomatoes are ready, add the garlic clove, basil, and finally the tomatoes to the food processor or blender. Blend well, but not completely. Meanwhile, cook the noodles.
- Add the grated cheese and blend until smooth. Once it forms a paste, transfer it to a bowl, add olive oil, and mix well.
- Coarsely chop the walnuts and almonds, making sure they're not powdery. The key is to give them a crunchy texture. Pour the nuts into the mixture, add a little more olive oil, and stir until combined.
- Cook the pasta as directed on the package, and remove it when it is al dente.
- We serve with the pasta al dente freshly taken out of the pot!
