Today, our favorite cook brings us another One Pot Pasta recipe… For those who aren't familiar with the recipe, one pot refers to pasta that can be cooked in a single container, along with its sauce. I love these recipes that are easy, quick, and minimally messy!
What I like most about today's recipe is the sauce: a Mediterranean sauce made with mushrooms and sun-dried tomatoes. It's very original and delicious. Plus, by cooking everything in the same container, the pasta absorbs even more of the sauce's flavor. I really loved it!

Complete One Pot Pasta Recipe!
Ingredients
First these
- 1/2 Onion
- 200g of spaghetti
- 8 mushrooms
- 2 tbsp sun-dried tomato pesto or other pesto*
- 4 dry tomatoes
- Salt and pepper
And for the sundried tomato pesto, these others
- Hydrated sundried tomatoes
- Basil
- Walnuts
- Olive oil
- Parmesan cheese
- Salt and pepper
How to Make One Pot Pasta: You'll Love It
- The amount of water we use is very important, as it's key to ensuring the pasta cooks properly (neither too much nor too little). For each serving of pasta, we'll use 1 1/4 cups of water. That means for 2 servings, we'll add 2 1/2 cups of water to a pot.
- In the same pot, without adding heat yet, we'll add the ingredients. Start by adding the noodles (I used feta).
- In this recipe, we're going to add several ingredients at the same time, before starting to cook. Therefore, we're going to chop and add the sun-dried tomatoes, mushrooms, red onion (you can use regular onion), and minced garlic.
- Add a tablespoon of pesto. I used a sun-dried tomato pesto, but you can also use traditional pesto.
- Finally, add salt and pepper and turn on the heat. The pot should remain preheated over medium heat.
- Stir until the pasta and sauce are cooked. You'll notice the mixture softening and cooking, so just stir and keep an eye on it. When the water evaporates, you should have cooked pasta with just the right amount of sauce.
- When the heat is off, add the anchovies and capers and mix again.
- Finally, we add a splash of olive oil along with grated cheese and they are ready to eat!
