Ingredients

  • 1 kg of beef gut (small intestine)
  • 2 garlic cloves (peeled and crushed)
  • 1 bay leaf
  • 1/2 onion (for cooking)
  • Salt to taste
  • Vegetable oil (enough to fry)
  • Corn tortillas 
  • Chopped fresh coriander (to decorate)
  • Chopped white onion (to decorate)
  • 3 lemons cut into rooms
  • Sauces to taste (of the aforementioned)

How to make beef tacos step by step

  1. Wash beef guts with cold water several times, stirring any residue or fat they may have. Soak them in water with vinegar or lemon juice for 10-15 minutes and then rinse well.
  2. In a large pot, place clean guts, and cover with water. Incorporate the garlic cloves, the average onion and the bay leaf. Add salt to taste and bring to a boil. Lower the heat and cook approximately 1:30 to 2 hours, or until the guts are tender.
  3. Once the guts are cooked, remove them from the pot and dry them well. In a large pan, heat vegetable oil over medium-high heat and when it is very hot, add the guts and fry them until they are golden and crispy, removing them occasionally so that they are brown evenly everywhere.
