In today's episode, we have a very, very easy homemade cheese. Ideal for beginners, this is the recipe for the famous yogurt cheese. You may not be familiar with it, but it's a very common recipe in Arabic cuisine, where it's called labneh.

Delving into the world of cheese can seem overwhelming. If we think about how cheese is made, we imagine a huge production plant, or a man wearing a beret in a very artisanal little shop in Tandil. Well, that's what I imagine. But cheese is one of the most varied and extensive foods in existence. There's a world of possibilities beyond grated cheese and fresh cheese.

It's in this vast world that we find this homemade cheese. It's creamy, with a tangy tinge like yogurt and a very smooth texture.

If it's your first time making cheese, this one won't fail. The best thing is that you can make it with ingredients you find at the supermarket (yes, non-dairy yogurt is available at supermarkets; look carefully or go to a health food store!) and you can get the hang of it before moving on to more complex cheese recipes.

About this homemade cheese recipe

As you will see, this recipe has several options, like a “ Choose your own adventure ” but with cheese.

You can make the cheese unseasoned, which is ideal for those with high blood pressure, as it doesn't have any added salt.

You can also add salt and that's it, or go for it and add salt, a little pepper, maybe sweet paprika, oregano, thyme, whatever you can think of. That's about the flavor.

As for the texture, you can decide to remove it at different times. If you remove it a few hours after draining, it will be more like a spreadable cream cheese. If you leave it longer, as in the video, it will be much firmer.

You can experiment and do it several times!

Homemade cheese recipe

Ingredients

super easy to get

  • 2 pots of neutral yogurt
  • 1/2 salt cdita
  • Pepper
  • Paprika
  • Garlic powder

Optional

  • Olive oil
  • Peppercorns

 

Homemade cheese in just 4 steps!

  1. Place the two yogurt pots in a bowl. Season with salt, pepper, paprika, and garlic powder (or whatever you like!) and mix well.
  2. Spread a clean cloth or rag over a deep plate. Pour the mixture onto it and lift the ends of the cloth. At this point, it's important to keep the cloth suspended. For example, you can tie the ends of the cloth to a refrigerator shelf and place a plate underneath without touching the cloth. This allows the mixture to drain. Leave it to drain overnight in the refrigerator.
  3. Remove the cloth the next day. You'll see that it resembles a creamy, more or less firm paste. You've got the cheese! Now you can store it in a container and use it, or continue with the next step for a higher level.
  4. Place a few drops of oil in the palm of your hand to prevent sticking, and form small cheese balls. You can store them in a Tupperware container or a container, or you can also place them in a jar with olive oil and peppercorns.

Pau!! I can't find the recipe for cream cheese or Greek yogurt... or anything similar but with a yogurt maker!! I make homemade yogurt weekly, but I know you can make cheese... please... If someone could help me...

I can't find natural yogurt in Buenos Aires. SanCor barely produces it, and other brands offer sweetened yogurt. I wanted to know if I could get it another way.

How interesting, Paulina! I'm going to try it! Especially after reading the labels on processed spreadable cheeses and rediscovering how unhealthy they are. If your cheeses can replace them, it would be a total success!
