Paulina taught us a very easy way to cook spinach that we'll never forget. The best part is that this method works for any leafy vegetable, whether it's spinach, chard, or whatever you like.
How does it work?
The first thing to do is wash the vegetables thoroughly and, without drying or draining them, place them in a dry pot. Then, cook them over low heat with the lid on, without any liquid other than the liquid the vegetables have received from washing.
We leave it on the heat for about 5-7 minutes and check that when the spinach “faints,” it is time to remove it.
At this point, you'll have realized that what we're doing is a basic imitation of steaming , because with the lid on, that's exactly what happens. The vegetables left at the bottom of the pot are the only ones that boil; the rest are steamed, and it's worth it, rather than assembling the steamer or the whole system with the small pot and colander, which is a pain.
With this method (steaming), many more nutrients are preserved . But not as much as when we wash them thoroughly and simply use the raw leaf.
What is it like to eat raw spinach?

How to make a spinach omelet step by step
- Wash all the vegetables thoroughly and chop them into small pieces. Once cooked, bring them to a boil and set aside.
- On the other hand, finely chop the onion along with the garlic, sauté both in a little oil and set aside.
- Using a fork, beat two eggs with a teaspoon of salt and a pinch of pepper. In a bowl, mix the cooled spinach with the sautéed onion, then add the grated cheese and beaten eggs.
- Heat a frying pan with a little oil on the bottom. Once hot, pour the entire mixture into the pan. Cook for 5 minutes over medium heat. When the edges begin to loosen, place a plate on top to flip the tortilla and cook for 5 more minutes on the other side.
Can I prepare this omelet with chard?
Swiss chard and spinach are both leafy greens, but they have some important differences: Swiss chard is larger and has thicker stems, while spinach is smaller and has thinner stems. The answer is yes! It will just be a little more bitter, given the difference in flavor between the two vegetables.
I agree with Carlos, garlic drowns out the spinach's flavor. You end up eating a garlic and onion omelet.
