Galician broth recipe

Ingredients
- 250 g of turnip greens (or collard greens, spinach or other green vegetables)
- 200 gr of potatoes
- 150 gr of fabas (white beans)
- 150 gr of pork (ribs, ham, bacon)
- 100 gr of Galician chorizo
- 100 gr of smoked bacon
- 1 onion
- 2 garlic cloves
- Olive oil
- Salt to taste
- Water, broth or chicken broth (approximately 2 liters)
- Sweet paprika
How to make Galician broth
- In a large pot, sauté the chopped onion and garlic until golden brown. Add the pork and smoked bacon to the pot and cook until browned.
- Stir in the soaked and drained fabas (white beans) well. Add the diced potatoes to the pot, stirring to combine.
- Pour the water, broth, or chicken broth into the pot until the ingredients are covered. Bring the mixture to a boil, reduce heat to low, and cook for 30 minutes.
- Add the turnip greens to the pot and cook for 15-20 minutes more, or until the vegetables are tender.
- In the last few minutes of cooking, add the sliced Galician chorizo and a pinch of sweet paprika to give flavor and color to the Galician broth.
- Taste and adjust the flavors. Serve hot.
