In addition to having benefits for the body, it is also reputed to be comforting for the soul, its name is in a book and is recommended by mothers and grandmothers in periods of flu or sadness. We are not talking about any magical potion but the delicious and easy chicken broth .

Many times when we think of chicken broth, a clear or insula agüita comes to mind but the reality is that if it is well done and with this recipe we will achieve a very tasty dish and with the minimum fat.

The great thing about this recipe is that in addition to being a dish in itself, we can use it for different preparations such as base for soup recipes for every day, stews and even sauces. That is, any preparation where the taste of the chicken can contribute its touch and benefits and we will also talk about it.

Difference between chicken broth and consommé

The chicken broth is made cooking chicken, bones and vegetables in water, resulting in a clear and tasty liquid. The consommé, on the other hand, is prepared in a similar way but undergoes an additional process of clarification with egg whites and other ingredients to obtain a more transparent and bright liquid.

  2. Sauces and marinages : It can also be used as the basis for sauces and marinages. Add taste depth and help enhance the flavors of other ingredients. It can be used to make pasta sauces, meat sauces, dobes for chicken, among others.
  3. Rice cooking and other grains : chicken broth is ideal for cooking rice and other grains, since it provides flavor and aroma to the final dish. The rice cooked in chicken broth has a richer and more tasty flavor than the rice cooked only in water.
  4. Disease recovery : In many cultures, this broth is considered a remedy to combat colds and diseases. It is believed that chicken broth has comforting properties and can help relieve respiratory disease symptoms.

Chicken broth recipe

This chicken broth recipe for having the flavors well concentrated and being low in fat is ideal to put in suitable containers and freezar. In this way we can have our delicious chicken broth available for when we need it.

  • Preparation time : 3 hours

Ingredients

  • 1 whole chicken (or chicken pieces with bone)
  • 2 large carrots, cut into large pieces
  • 2 celery stems, cut into large pieces
  • 1 large onion, peeled and cut into rooms
  • 4 garlic cloves, peeled
  • 1 bay leaf
  • 1 teaspoon of whole pepper grains
  • Salt to taste
  • Water c/n to cover the ingredients (approximately 4 liters).

How to make chicken broth in 5 steps

  1. In a large pot, place the chicken and cover with cold water. Bring to boiling until it boils. Reduce low to low and remove the foam that is formed on the surface.
  2. Add carrots, celery, onion, garlic, bay leaf and pepper grains to the pot. Wrap the ingredients in a piece of gauze or muslin to facilitate its subsequent removal or leave them loose in the broth.
  3. Cook over low heat for approximately 1 hour and a half. Ensure that the broth bubbles. During cooking, add additional water if necessary to keep the ingredients covered.
  4. Then, remove chicken parts and book to use in other preparations. Meanwhile, strain the broth through a strainer to remove solids and get a clear liquid.
  5. Cool the broth and completely remove the solidified fat layer that is formed on the surface. Season and serve.
