Yield: 6 to 8 cups (1.5/2 liters).

Preparation time: 8 to 24 hours.

Ingredients

  • 1.5 kg of cow bones (preferably with cartilage and marrow, such as knee, femur or garrón)
  • 2 carrots (whole or cut into large pieces)
  • 1 large onion (without peel, cut in half)
  • 2 celery branches
  • 2 garlic cloves (whole, without pelar)
  • 1 Romero twig (optional)
  • 2 tablespoons of apple vinegar
  • 2 bay leaves
  • 3 liters of cold water
  • Salt and pepper to taste

How to make bone broth step by step

  1. Preheat the oven to 200ºC. Place the bones on an oven tray and toast them for 30 minutes until golden brown.
  2. In a large pot, place roasted bones and all vegetables. Cover with cold water.
  3. Add apple vinegar and let stand 10-15 minutes before lighting the fire.
  4. Take over medium heat until it begins to boil. Lower the heat to a minimum and cook between 8 and 24 hours.
  5. During the first hour, withdraw with a sparkling the impurities that rise to the surface.
  6. Strain the broth with a fine mesh strainer or cotton cloth. Let cool. Optional: Refrigerate for a few hours and remove the solidified fat layer before consuming or storing.
