What do you say if I tell you that these fried eggs with bell peppers were eaten at my wedding?
They tell me they're not interested? What do I care? What's the most inconsequential fact?
Well, I don't care. I'll tell you the same thing. After all, this is my website.
We celebrated my wedding at what is possibly the best Italian restaurant in Argentina. I'm confident in that. I don't care about Michelin stars or guidebook recommendations. Capotte has 15 tables, is in a stunning location, and serves the best food in Calabria, Buenos Aires, and the world.
The one who makes it is Yeye, a not so distant relative of my family.
I didn't choose the dishes. Yeye handled that, and it was a surprise for us. That's why I trust the food here.
Well, all this comes to mind because one of the (numerous) starters was these eggs on a plate with bell peppers, or as we call them: egg.
Guys, this dish is SO delicious, so so delicious… In addition to being a festival of colors.
I don't have a relationship with Yeye to ask for the recipe, but the shit left its mark on my retina and palate.
Here's my version of the thing, based solely on what I ate that day and some memories of my nonna.

Ingredients
For 3 portions
- 3 divine eggs
- 2 large red bell peppers
- 2 tomatoes
- 2 garlic cloves
- 4 tbsp tomato puree
- Chopped parsley
- Optional: strips of bacon
- Salt, pepper and oil
Recipe for eggs on a plate with bell peppers
The thing about Cinderella's hairstyle is true
1. If you decided to add bacon, brown it in an empty pan to remove the fat. When it's browned, remove it and set it aside.
2. Cut the bell peppers into large pieces.
3. Place them in the pan with a little oil, over medium heat.
4. When the peppers have “fainted” a little, add the tomato, peeled and chopped, the reserved bacon if you added it, and the chopped garlic.
5. When the tomato has changed color (darker), add the tomato puree and season with salt and pepper. Add half a glass of water—or broth, preferably—and cook covered over medium heat for about 15 minutes.
6. Uncover and make 3 holes for the eggs. Place each egg in its place and cook, always over medium heat, with the pot uncovered (to prevent the yolks from overcooking).
7. Serve and sprinkle with chopped parsley.

Very good, Paulina. My presumed husband looks at me like I'm an addict every time I make Florentine eggs (or he finds the pot dirty because I secretly cooked them but forgot the evidence). This is very similar to what my mother used to make, it is...very...very delicious, now I couldn't really mix it with the bread, but something, simple but a king's food, I would probably add half a teaspoon of sugar but nothing more, you've already opened the floodgates for me...Pablo.
