Curry Thailand recipe

Yield : 4 portions

Preparation time : 30 minutes

Ingredients

  • 2 tablespoons of vegetable oil
  • 2 tablespoons of Thai curry paste (according to spicy preference)
  • 400 ml of coconut milk
  • 500 gr of protein (chicken, shrimp, tofu, etc.), cut into pieces
  • 1 red pepper, cut into strips
  • 1 Thai eggplant, cut into cubes
  • 1 carrot, sliced
  • 400 gr of bamboo shoots, drained
  • 2 teaspoons of fish sauce
  • 1 teaspoon of palm sugar (or brown sugar)
  • Thai basil leaves and fresh coriander to decorate
  • Lima juice to taste

4 steps for a delicious curry thailand

  1. In a large pan, heat the oil over medium heat. Add the curry paste and sauté for 1-2 minutes, until it is slightly obscured. Add coconut milk and mix well.
  2. Add the chosen protein and cook, occasionally stirring, until it is almost completely cooked (approximately 5-7 minutes for chicken or shrimp, 3-4 minutes for Tofu). Incorporate all vegetables and cook for 5-7 more minutes, until they are tender.
