Their popularity knows no bounds, from the lively streets of Medellín to the quiet corners of Cali , aborrajados have become an integral part of daily life.

The origin of the aborrajado

The history and origin of the Colombian aborrajado are intertwined with the culinary traditions of that country, specifically in the Valle del Cauca region, which includes departments such as Valle del Cauca, whose capital is Cali.

Although there is no exact date of its creation, the history of aborrajado is related, like many other Colombian recipes, with African, native and Spanish influences, which shaped the gastronomy of the country and the region .

The Valluna region is known for its abundance of ripe plantains, a key ingredient in the preparation of aborrajados (a dish of sweet plantains). The culinary creativity of Valluna families led to the combination of ripe plantains with cheese, egg, milk, and flour, giving rise to this delicious specialty.

Drunk or drunk?

The variation in pronunciation of “ aborrajado ” or “ embarrajado ” in Colombia is more a matter of regional preference and linguistic localisms than a strict distinction between specific regions.

There is no fixed rule determining where each term is used, and it is possible that both forms are accepted in the same region. However, in some areas, one form is preferred over the other. For example, in some areas of Antioquia and Bogotá, it is common to hear the term "aborrajado," while in other parts of the country, the term "emborrajado " is preferred. It is important to note that both forms refer to the same dish.

Key components of aborrajados

  • Ripe Plantain: It's essential to choose plantains at the perfect point of ripeness, when the skin is yellow with dark spots, indicating that the plantain has reached its peak sweetness. Ripe plantains are used in many classic recipes from the region, such as patacones and bandeja paisa .
  • Bocadillo: Bocadillo is a typical Colombian sweet made from guava. It comes in solid blocks that are cut into thin strips to fill plantains. The bocadillo provides a sweet and sour note and a sticky consistency that contrasts with the softness of the plantain and cheese.
  • Cheese: Cheese is another key ingredient. A cheese that melts easily when fried is used, providing a creaminess that complements the sweetness of the plantain and the richness of the sandwich.

How to make aborrajados with cooked plantain

Preparing plantain aborrajado is more than just following a recipe; it's an art that requires patience and a love of cooking. Choosing the right plantain is crucial; it must be ripe to achieve the perfect combination of sweetness and texture .

The plantain must be cooked, for which it is fried beforehand, which gives it its characteristic flavor . Then comes the delicate process of filling each piece of plantain with sandwich and cheese. To do this, the plantain is usually flattened so that it can encase the filling. Finally, they are dipped in batter, a mixture of egg, milk, and flour, and carefully dipped back into the hot oil and fried until golden.
