How to make homemade yogurt: some clarifications
Paulina here, guys. A few things I'd like to clarify for you about this homemade yogurt.
- The raw material: The better the milk and yogurt you use, the richer your homemade yogurt will be. It's important that the milk isn't ultra-pasteurized, as this process kills the bichamen present in natural milk, which is necessary for making yogurt. It can be pasteurized milk, but not ultra-pasteurized.
- The flavor: Its flavor is that of natural yogurt, slightly acidic. That's why, unless it's a savory preparation, I like to add some sweetener.
- Texture: You can't see it in the video, but the texture of this homemade yogurt improves dramatically with the cold. Once we take it out of the blanket, we put it in the refrigerator. After a few hours, it will look much creamier and smoother.
- If you want it thicker: add a measure of powdered milk equal to the yogurt container to the mixture. Stir well to dissolve. This way, it will be just like regular supermarket yogurt. If you want your homemade yogurt even thicker, add more powdered milk.
- How long does it take? Your homemade yogurt will be ready in 6 hours. If you leave it a little longer, it will improve. Ideally, it should sit overnight.
- How long it lasts: A long time. They say yogurt never expires.
- And what's up with the yogurt maker? What the yogurt maker does is simply maintain this constant temperature using an electric heating element. That's what we do here with the blanket.
- I know! So I'll do it with an electric blanket: don't say stupid things, will you?

- 1 lt. of milk
- 1 small natural yogurt
How to make homemade yogurt

- Place the milk in a saucepan over medium heat. Don't move from the side of the pan and stir occasionally. The milk should reach approximately 80°C (176°F), or just shy of boiling. If you don't have a cooking thermometer (like me), check the rim of the milk: when small bubbles begin to form, remove it from the heat as soon as they begin.
- Mix a ladleful of this warm milk with the pot of natural yogurt. Stir well until combined.
- Add the yogurt and milk mixture to the pot, along with the remaining milk, and combine while stirring.
- Place the entire milk and yogurt mixture in a large jar made of a material that doesn't lose its cold very often (glass or metal are fine, plastic will also work, but glass or metal is better).
- Wrap the container in a blanket or towel. Place a clean dish towel on top and DO NOT cover with the jar lid.
- Take the wrapped homemade yogurt to a closed place: the oven turned off, the microwave, a box, the closet, the child's backpack, or whatever you can think of.
- Leave it like this for 6 to 12 hours. As explained above, it will be ready after 6 hours, but with a little more time, its texture will improve.

Hi, I'm making the recipe just like Paulina's, but instead of a blanket, I'm using an Essen pot (they make them in my city). How do I do it? While I'm making the yogurt, I heat the pot, empty it, and cover it. When I'm done, I turn off the burner, put the steamer inside, fill plastic cups with the mixture, put them in the steamer, cover them with a blanket, and put the lid on (even if it doesn't seal properly, it keeps it warm). I leave it near the stove or a warm place until the pot cools, and then some. It comes out great.
