About this #1000Prep of healthy meals

Healthy recipes to take to work have to meet several requirements: on the one hand, they have to be easy to take with you because we usually prepare them the night before.

Likewise, they have to be quick in case we prepare them in the morning.

On the other hand, they have to be recipes for food that doesn't go bad after a few hours, since they have to last a while before being eaten.

So if you're looking for ways to make healthy lunches for the office, school, or college, these on-the-go recipes will be great for you!

Ingredients

They are the general ones, in the description is the use of each one according to the food

  • 1 egg
  • 1 lettuce
  • wheat tortillas
  • 1 tbsp mayonnaise
  • 100g mozzarella cheese
  • 1 tbsp. grated cheese
  • 2 slices of cooked ham
  • 1 tbsp. natural yogurt
  • 1/2 lemon
  • 1/2 cucumber
  • 1 can of tuna
  • 1/4 onion
  • 2 sun-dried tomatoes
  • 1/2 zucchini,
  • fresh arugula
  • 1 jet of milk
  • oil
  • vinegar
  • salt
  • pepper

This is how easy it is to make these healthy meals.

They are 4 different tastes

  1. The very first thing we're going to do is mix an egg with salt and a splash of milk in a small bowl to stretch it a little and slightly soften its flavor.
  2. Place a pan with a little butter on the stove and add half the egg to it to cook. The idea is to make it fairly whole, meaning not too scrambled.
  3. Once it's done, we carefully remove it and make what's left of the mixture, this time without paying too much attention to the shape.
  4. We'll set aside these two eggs and now we'll move on to the lettuce. We'll chop it into large pieces and set it aside for later.
  5. The third step is really important: it is the dressing that we are going to use, no matter what kind of food we make.
  6. In a small bottle, preferably with a screw-on lid, we are going to mix a splash of oil (the one you like best) with a splash of vinegar and a pinch of salt.
  7. You can make different dressings with this same formula: One fat, one acid, salt and pepper.

Let's go with the first option of food:

  1. We take a wheat tortilla, spread it with a little mayonnaise, add ham and the large, round egg we made earlier, top it with cheese, and close it in the middle.
  2. Then we place it on the electric grill or any other griddle or oven. We heat it and remove it when it's ready (without melting the cheese too much).
  3. Then they wrap it in aluminum foil and that's it! It goes to work in a Tupperware with some lettuce and Parmesan cheese.
  4. Don't forget the little jar of dressing!

For option 2:

  1. First, mix the yogurt in a bowl with a dash of olive oil, salt, pepper, and a few drops of lemon.
  2. We take the tortilla, spread the yogurt on it, and on top we put a little of the lettuce that we had chopped, a little cucumber, and on top, mozzarella cheese.
  3. If you wish, you can add chicken.
  4. Finally, we roll up the tortilla, then wrap it in aluminum foil and it's ready to go.

For option number 3:

  1. We chop half an onion and mix it in a bowl with a little mayonnaise and a little tuna.
  2. Then we bring the egg that we had left, well scrambled and add it to the preparation.
  3. We also added a few drops of lemon juice and a little bit of zest.
  4. Finally, we add pepper. We don't add salt because the tuna already has enough salt.
  5. We just need to put a small layer of lettuce on the tortilla and pour the freshly made mixture on top.
  6. We wrap the filling in the tortilla, and then the tortilla in aluminum foil. That's it.

The last option:

  1. It requires us to start by submerging some dried tomatoes in a cup of water and placing it in the microwave for 2 minutes.
  2. Meanwhile, slice a zucchini and brown it on the electric grill or any other griddle. Once it's tender, remove it.
  3. We take the tortilla, spread cream cheese on it, and on top we put the arugula, then the sun-dried tomatoes and finally the zucchini.
  4. We throw a little grated cheese on top.
  5. We roll it up and wrap it in foil and say “bye bye, goodbye” to ordering food at work again.
