Although the ingredients of this dessert are the basis of any classic pastry worldwide, it's not usually purchased in restaurants. The typical Galician fried milk is a truly homemade dessert. It's said to be one of the most typical desserts Palencia in Castile and León, but in reality, while it's believed to have originated there, it was actually northern Spain that made it popular.
In Coruña, there are also some recipes written that use breadcrumbs, but their texture is a bit more rustic. Those made with flour are more delicate.

Fried milk recipe
- Yields: 6 to 8 servings.
- Total preparation time: 30 minutes.
- Intermediate resting time: 3 to 12 hours.
Ingredients for a super creamy fried milk!
- 750 ml of whole milk.
- 100 gr of powdered or icing sugar.
- 2 egg yolks.
- Peel of a lemon and an orange.
- 75 gr of corn starch.
- 40 gr butter.
- 1 cinnamon stick.
- 1 vanilla pod (or a dash of vanilla essence).
- Oil for frying (the classic is mild olive oil but use your preferred oil).
To bounce:
- Egg.
- Plain flour.
- Common sugar to sprinkle at the end.
How to make easy fried milk, step by step
- Separate a small glass of milk and set aside. Place the rest in a small saucepan and bring to a boil. Remove from heat and add the butter, citrus peel, cinnamon, and vanilla. Mix everything together and let it infuse, covered, for 5 minutes.
- Mix the cornstarch with the small glass of milk, being very careful to avoid lumps.
- On the other hand, beat the egg yolks together with the sugar until foamy.
- Add the glass of milk and the cornstarch and beat again until smooth and the mixture is smooth. Set aside.
- Strain the infused milk and return it to heat over the heat.
- When it reaches about 50 or 60 degrees, begin adding the previous cream in a stream, little by little, while whisking vigorously to prevent lumps from forming. Keep stirring to prevent it from sticking to the bottom. Once it has a firmer texture, similar to pastry cream, it's ready! Remove from heat.
- Grease or butter a mold or dish (to make it easier to remove the leche frita later) and pour the mixture into the mold. Smooth the surface with a spatula. When the milk has cooled, cover with plastic wrap or a plastic bag and refrigerate for 3-4 hours (the longer the better, as it will be easier to handle later).
- Once the time has passed and the milk has curdled, remove it from the mold and cut it into square or rectangular pieces.
- Dip it in flour first and then in beaten egg, until it is well coated on all sides.
- Fry in plenty of oil over medium-high heat for a minute or less. Turn the pan carefully so that it browns evenly on all sides.
- When removing them from frying, pass them through a plate with sugar (it can be sugar mixed with cinnamon powder).
- Place in a dish and serve 🙂
