Ingredients

  • 5 eggs.
  • 500cc of milk.
  • 200g of sugar.
  • 150 gr of grated coconut.
  • Vanilla essence and an optional teaspoon.

For the candy

  • 100 cc water. 
  • 200g of sugar.

Step by step to make homemade coconut flan

  1. Place 5 eggs in a bowl and then add 100g of sugar. Whisk gently until the eggs break up.
  2. Add the milk and grated coconut. It's very runny, but it will form a paste. Stir with a fork until everything is well combined. Remember not to beat; it shouldn't be foamy, just well blended. Set aside.
  3. The flan is cooked in a bain-marie in the oven. To achieve this, place the flan dish on top of another larger container with water.
  4. First, place the caramel inside the flan dish and then add the flan mixture on top of the caramel. Pour water into the flan dish and bake in a preheated oven (at least 160ºC) for approximately 40 minutes.
  5. To tell if the flan is ready, the trick is the same as for any cake: insert a knife and it should come out clean. If you do this test and it comes out clean, the flan is ready. Before removing from the mold, let the flan cool completely. Once it's cold, remove it from the mold and eat it. It's that easy.

How to make caramel

  1. Place a pan over medium heat with nothing else to make a dry caramel. Pour in the remaining 100 grams of sugar and stir constantly with a wooden spoon.
  2. It takes time, but you'll see that it will melt and the sugar will go from being granular to liquid and its color will begin to turn brown.
  3. Be careful that the color doesn't turn too dark brown, because that means it's burning and will develop a bitter taste that will ruin the recipe.
