Ingredients

  • 2 boneless, skinless chicken breasts, cut into thin strips
  • 1 red pepper, cut into strips
  • 1 green pepper, cut into strips
  • 1 medium onion, cut into strips
  • 2 garlic cloves, chopped
  • 2 tablespoons of olive oil
  • 1 lemon juice
  • 1 teaspoon of ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Lettuce, cut into strips
  • Tomato, diced

How to make Mexican chicken and vegetable fajitas

  1. In a bowl, combine the chicken, lemon juice, cumin, chili powder, minced garlic, salt, and pepper. Mix well so the chicken is coated with the seasonings and marinate for 30 minutes.
  2. Heat a tablespoon of oil in a large skillet over medium heat. Add the marinated chicken to the pan and cook for 5 to 7 minutes. Remove and set aside.
  3. In the same pan, add another tablespoon of oil and the bell peppers and onion. Cook for 5 minutes until tender-crisp. Season with salt and pepper to taste.
  4. Add the chicken to the pan and stir it in. Cook for a couple more minutes to allow the flavors to blend.
  5. Heat the tortillas until warm and pliable. Serve the chicken and vegetable fajitas in the warm tortillas with the lettuce strips and diced tomatoes.
