Some scholars of gastronomy suggest that fricandó can have influences from French cuisine. The term " fricandó " resembles the French word " fricandeau ", which refers to a beef cut (the central part of the low spine). It is a tender and lean piece that is used in the kitchen for this type of preparations.

In many Catalan families , it is a traditional dish of Sundays on Sundays. It is considered a special meal and prepares with love and dedication . It is considered a typically winter dish. Due to its slow cooking method and comforting ingredients, it is perfect for the coldest months of the year.

What is the fricandó?

The fricandó is a tasty and comforting dish . The combination of tender veal , tomato sauce and mushrooms , along with white wine and spices , gives it a distinctive flavor. It is a typical home kitchen dish and is considered a classic of Catalan gastronomy. It is prepared mainly with veal fillets (usually from the most tender part, such as the sirloin), onion, tomato, mushrooms, white wine, meat broth, olive oil, salt and pepper .

  1. Cut the veal fillets into thin strips and brown them into a pan with hot olive oil. Then the fillets are removed and the chopped onion , which is cooked until golden.
  2. peeled and chopped tomato is added , as well as sliced mushrooms. Then the fillets are rejoined to the pan and the white wine and the meat broth are added.
  3. The cooking is over low heat until the meat is tender and the sauce has been reduced.

3 tips to achieve the best fricandó recipe

  1. An important fact to make a good fricando is to make sure to use a tender and quality veal meat . The most commonly used cut is the sirloin, but you can also opt for other tender cuts, such as the back or against.
  2. Another key point is to make fricandó cooking . This allows the meat to soften and the flavors fuse properly in the sauce . It is important to be patient during cooking and allow the ingredients to cook slowly to obtain the best results.
  3. Finally, it is essential to break down the pan with the white wine before adding the meat broth. This helps incorporate caramelized flavors and provides a note of acidity and depth to the plate.

Variants

The fricandó is generally served with mushrooms but can also be combined with other types of mushrooms, such as boletus, beloved or seasonal mushrooms , to add variety of flavors and textures.

Although the traditional fricandó is done with veal and mushrooms , it is possible to make variations using different types of meat, such as pork or chicken , and varying the ingredients of the sauce, such as adding red wine instead of white wine. This allows you to adapt the dish to different tastes and preferences .

The fricandó is a characteristic dish of Catalan cuisine , in the same way there are similar dishes in other cultures. For example, in French cuisine, there is the "Blanquette de Veu" , a veal stew in a white sauce. There are also similarities with the "Sauté" or the back to Strogonoff in other traditions.
