The origin of this type of chifa food (a term used in Peru to refer to Chinese-Peruvian food or the restaurants that serve it) comes from Chinese-chantonese immigrants who arrived in Peru at the end of the 19th and early nineteenth century.

The word chifa comes from the words chi and fan that give meaning to the words in Spanish eating and rice , respectively. This dish, based on chicken, requires very common ingredients in Chinese and Peruvian cuisine.

The TiPakay chicken has a high nutritional value, both for the use of chicken and the tamarind and its vitamin contribution to the organism is high and therefore highly valued.

The origin of the name " Tipakay " is not clear, but it is believed that it comes from the "Pei Paa Gai" Cantonese, which means "Chicken with Chinese plum." This typical Peruvian dish was born from the fusion of native customs with those of Chinese immigrants.

It is one of the many dishes of the so -called "Chifa", a word that took strength from the 1930s and became very popular until today, exceeding borders and reaching other countries in Latin America and the rest of the world.

Chijaukay and Tipakay: Salado and Dulce

The main difference between Chijaukay and Tipakay is the sauce that both carry. The TiPakay chicken is a sweet preparation with fried chicken, empanized in chuño or flour, which carries a sweet sauce, also known as Tamarindo, has a reddish color and is accompanied with Chinese vegetables, as well as pieces of pineapple and peach.

Chijaukay chicken is a salty preparation with fried chicken, which bathes with a sauce prepared with Chinese cinnamon, kion, chair and sesame . Because of the elements involved, it has a brown and somewhat translucent color.

In summary, we can conclude that the TiPakay chicken is sweet and Chijaukay is the salty . Although both will find similar elements and none of them is a dessert, so it would be more successful to say that the TiPakay chicken is bittersweet.

TiPakay chicken recipe

Yield : 2 portions

Preparation time : 25 minutes

Ingredients

  • 1 chicken breast cut in two
  • 3/4 cup of tamarind sauce
  • Vegetable oil
  • 2 Chinese onions cut into pieces
  • Salt to taste
  • 1 cup of chuño (cornstarch)
  • 2 eggs

Easy and fast chicken preparation TiPakay

  1. Beat the egg and add a pinch of salt. Reserve.
  2. Cut the breast without finishing triggering pieces and salary it at ease
  3. Dip the two pieces of chicken breast in the beaten egg. Immediately, pass them through the Chuño.
  4. Fry in a pot with oil the breasts on both sides. Reserve.
  5. In a pan with a splash of oil add the tamarind sauce, mix for about 3 minutes and remove from the heat.
  6. Serve the chicken and pour the tamarind sauce on top. Plaster with the accompaniment chosen and sprinkle with Chinese onion.
