How my dear ones, here I leave a recipe extracted from volume IV of tetralogy versatility of the salty cake . Ninth edition, corrected and augmented. Well, this above is a bit lie but let's pass it.

What a pretty thing to experiment, the tomato cake, right? One puts what he has in the refrigerator and, with a little criteria, always looks good. There are some meals with which I find it very fun to experiment, and among my tops is the rice and the salty cakes. It must be because you can invent a thousand things, the combinations are almost infinite!

This time he touched tomato and onion cake, linked with cheese and egg.

Tomato cake recipes are not very usual since the tomato releases too much water and it is not easy for it to be well in a cake (unless we give it a good cooking, it reduces it too much). This is why I choose to put it in general on the cake, separately from the preparation with the league. This causes moisture tomato to the cake but without "separating" our filling. That is: it is not a tomato cake filling but a cake with the tomato.

Ingredients

For a tomato cake

  • 1 garlic clove
  • 1 large onion
  • 4-5 Green onions
  • 150 g. of creamy cheese
  • 2 eggs
  • 1 handful of parsley
  • 2-3 tomatoes
  • 1 cake mass cover
  • 100 g. of grated Parmesan cheese
  • Oil
  • Salt and pepper

Step by step recipe

  1. Chop the onions and onions of green in small pieces and brown them in a pan with olive oil over medium heat. If they do not have green onion they can use a pair of common onions (and vice versa), the cake will be delicious the same.
  2. Add the garlic, also chopped in very small pieces. Cook until the onions are tender, with which they are cooked is fine.
  3. Incorporate about 150 g into the same pan. of creamy cheese. Turn off the heat and remove well until the cheese melts, do not distrust that if they turn off the fire, everything is going to be stuck. Salpimenar and wait for it to be warm. If you want to add any other seasoning this is the time.
  4. Once the preparation is no longer hot to add the eggs and quite chopped parsley. Mix until all ingredients are completely integrated.
  5. Stretch the cake dough on a disk previously smeared with oil or a little flour, just to prevent the dough from sticking to the mold.
  6. Carefully place the mixture of onions with cheese inside the disc.
  7. Add on top of tomato and grated cheese.
  8. Bake at medium temperature until the dough is well golden!
