Welcome, my loves, to this beautiful edition of Paulina Cocina, where we're going to prepare a potato rosti of love. The potato rosti recipe is the base of this dish, but it also has other delicious ingredients that you'll love.

I made this dish as part of one of my channel's programs called #2mangos, and in this case it's a competition with Pilopi to see who can prepare the best dinner using only 2 euros (and its equivalent in pesos) to buy the ingredients.

So, here's this recipe for potato rosti with egg, bell peppers, and arugula. You might not know what it is. Here's another recipe from this #2mangos section, but in a fully chopped .

Ingredients

for two portions of rosti potatoes

  • 1 Pope
  • Arugula
  • A grilled sausage
  • A tomato
  • A bell pepper
  • 1 garlic clove
  • 1/2 dozen eggs
  • Oil
  • Salt
  • Pepper
  • Paprika
  • Sugar

Instructions for making Potato Rosti

  1. The first thing we are going to do is peel the potato and grate it all with the large part of a grater.
  2. Let's cut the bell pepper into large pieces.
  3. We slice the garlic clove into strips. Remember to remove the small sprout in the middle of the garlic clove to give it a milder, more pleasant flavor.
  4. We cut the tomato into cubes.
  5. Place a pot on the stove with a splash of olive oil, the garlic, and the bell peppers. Sauté briefly.
  6. Meanwhile, we put the grilled sausage in a pan on the stove. Without any fuss. We'll break it up with a wooden spoon, making it look like minced meat. We'll also notice that it'll release a lot of liquid fat, so we'll remove it from the pan and return it to the heat until our sausage pieces are nice and crispy and golden.
  7. Once we see that the peppers are cooked (even if they're a little charred on the skin), we add the diced tomatoes to the pot. We'll also add salt, a pinch of pepper, and a handful of sugar. We cover the pot and let it cook over low heat for a little longer, until the tomatoes change color slightly.
  8. Meanwhile, let's check the sausage. Once it's nice and browned, remove it from the heat because it's cooked to the exact point we wanted. Set aside.
  9. Once we remove the pot from the tomatoes and bell peppers, we'll process everything with a hand blender right there in the pot until we have a paste with the consistency of sauce. Set aside.
  10. Now it's time for the potato, clearly the most important part of the rosti . To the grated potato we made, we'll add salt, pepper, and a teaspoon of red paprika. Mix well with a fork and then divide the grated potato into two parts as evenly as possible.
  11. Place a frying pan over medium heat with oil and take one of the zest halves. Flatten it slightly with your hands and place it on the pan. Use a spatula to flatten it well. The shape isn't as important as the thickness, which should be medium. Neither too thin nor too thick. This way, we'll wait for it to cook on one side, and then turn it over so it finishes cooking on the other side.
  12. 12- Egg turn . This is an easy way to prepare a poached egg: we'll place a piece of plastic wrap in a small bowl or cup, covering the inside and protruding outwards. Inside, on top of the plastic wrap, we'll pour the egg. We'll wrap it in plastic wrap and seal it, forming a sort of packet. We'll repeat the procedure for the second portion. As is, they'll go into the boiling water for about 4 or 5 minutes. When that time is up, we carefully remove them. We'll let them cool and cut the plastic wrap to remove it completely.
  13. On a plate, we place: First, the potato rosti, the base of our dish. We continue spreading our bell pepper sauce, a generous amount. On top of the pasta, we place some clean, dry arugula leaves, and on top of the arugula, we place our poached egg. On top, we add our crispy sausage pieces, and voilà! We have our divine, delicious, and inexpensive dish!

  • Grated cheese
  • Green onion
  • Cream cheese
  • Salt, pepper and butter

How to make potato rosti step by step

  1. Peel the potatoes and cook them for 1 minute in the microwave or 5 minutes in boiling water. They can also be cooked raw, following the original Swiss recipe.
  2. Grate them with the coarse side of the grater. What a pain grating things, for God's sake. But that's right, you have to grate the potatoes. It could be worse. Roquefort cheese, for example.
  3. Mix the grated potato with the grated cheese, chopped spring onion, salt, pepper, and cream cheese. I add a teaspoon of fat per potato, and it gives it a delicious touch. Mix well.
  4. Place butter in a hot frying pan. Add spoonfuls of the potato mixture and mash it while cooking. Cook over medium heat. Low heat will dry out the potatoes, while high heat will not cook them well.
