How to make a peach pie with gelatin

Ingredients for a 22 cm mould. 

  • 250 gr of self-rising flour. 
  • 100 gr of margarine.
  • 175 gr of sugar.
  • 2 eggs.
  • 1 teaspoon baking powder.
  • Zest of 1 lemon.
  • Cornstarch q.s.
  • 250 gr of sweet.
  • 250 g of cream (double or high fat).
  • 250 gr of fruit.
  • 1 sachet of unflavored gelatin. 
  • 200 gr of syrup.

For the peach pie crust

  1. In a bowl, mix the sugar with the eggs and the lemon zest.
  2. On a flat surface, place the flour, baking powder, and room-temperature margarine. Mix the ingredients with your hands without kneading.
  3. Add the egg and sugar mixture and begin mixing, adding the necessary amount of cornstarch until the dough doesn't stick to your hands. Place the dough in a bag and refrigerate for a couple of hours.
  4. Roll out the dough on a floured surface, then place it stretched out inside the greased tart pan. Bake in a preheated oven for at least 20 minutes.

How to make peach pie

  1. Place a layer of dulce de leche on top of the base and chill.
  2. After about 10 minutes, add a layer of unsweetened whipped cream and refrigerate.
  3. Cut the peach into thin slices. Then prepare the unflavored gelatin. Finally, add the syrup to the gelatin and mix. 
  4. Cover the surface of the pie with peaches and top with the gelatin. Refrigerate for 1 hour. Add more gelatin if necessary.

How to make a peach cheesecake

Ingredients

  • 200 g of vanilla cookies
  • 100 gr of softened butter
  • 1 can of peaches in syrup
  • 500 gr of white cheese 
  • 150 g of powdered sugar
  • 1 sachet of unflavored gelatin

How to make peach cheesecake with a cookie crust

  1. Crush the cookies in a blender or by hand. When they are perfectly sanded, add the melted butter and mix until fully incorporated. Place this moist cookie on the bottom of a greased pan or lined with parchment paper. Refrigerate.
  2. Hydrate the unflavored gelatin and set aside.
  3. Mash the peaches and add half of the warm gelatin, reserving the other half. Mix until combined.
  4. In a bowl, place the cream cheese and sugar together and beat until completely combined. Finally, add the reserved peaches and gelatin along with two tablespoons of syrup and mix until smooth.
  5. Add the mixture to the chilled cookie base and refrigerate for 2 hours. 
  6. Slice 3 peaches for garnish and set aside. After 2 hours, decorate the tart with peaches and sprinkle with the remaining gelatin. Chill for another 2 hours.
