Ingredients

For 3 portions

  • 1 large piece of meat (I used topside)
  • 2 potatoes
  • 3 garlic cloves
  • Salt, pepper and oil

has its trick

  1. Preheat the oven.
  2. Cut the potatoes neither too large nor too small, depending on the size of the meat, so that they are together at the same time.
  3. Place the potatoes on a baking sheet: lined with kitchen paper, oil on top, and then place them in the oven. Make a space in the middle and place the meat and garlic in the pan. Season with salt and pepper.
  4. Bake in a oven for 10 minutes.
  5. The mixture : Bring 2 glasses of water to a boil, and when it boils, add the broth, vinegar, and thyme. Let it reduce for 5-10 minutes.
  6. Remove the meat from the oven and baste it with the mixture for the first time. Return it to the oven and lower the temperature a little below the minimum. Cook at this temperature for about 1 hour. Every 10-15 minutes, remove it and baste it again with a couple of tablespoons of the mixture.
  7. When the roast beef with potatoes is ready (depending on whether you want it juicy, medium or well done), turn the oven up to maximum for 5-10 minutes, so that it browns .

I like to add sweet potato, a lot of onion, and tomato slices to my oven-roasted meat. These slices add flavor to the meat as they cook. I also put a whole head of garlic wrapped in aluminum foil in a small place. A delicacy.

Why do you put kitchen paper in the baking pan? To avoid dirtying it or for some other reason?
