It also has one of the best things on the planet: the Caracú.

As the Osobuco is a cut that comes with bone, it brings us as a gift the Caracú that is like the medulla. If the instructions follow, they will be very tender and will add to our Osobuco potato cake an incredible flavor!

For 2 portions

  • 3 bifes of Osobuco (almost half a kilo)
  • 3 potatoes
  • 1 carrot
  • 1 onion
  • oil
  • salt
  • pepper
  • Balsamic aceto

  1. Wash and peel the carrot and potatoes. Cut the potatoes into cubes, carrot into large pieces and cook in water. Peel and chop the onion.
  2. Save Osobuco's pieces and take a pot with a little hot oil to brown the Osobuco. Cover and cook.
  3. Once it is very golden side, we turn it and add the onion, a little salt and pepper and cover again.
  4. When the onion is well toasted, add half a glass of water and the homemade caldito or the purchased. Cover and leave over half an hour, 40 minutes. This is one of the stars recipes of my new cheap e-book, you can see it here .
  5. After that time add a splash of balsamic aceto and leave a few more minutes. Cook until it is very tender.
  6. Meanwhile, we are going to separate potatoes and carrot, and puree with each one. We add salt, a little butter and milk if they wanted.
  7. Remove the Osobuco from the fire and once lukewarm, crumble it. To take advantage of the Caracú, remove it from inside the bone with a knife or a teaspoon and add it to the meat.
  8. Armed: Put some potato puree at the base of a source that can go to the oven, add our Osobuco filling and cover with the rest of the potato. Decorate with carrot puree. Dance while dorants in the oven.
