About Cordon Bleu
What is it?
The Bleu Cord is a dish that is made from a piece of meat, usually chicken, which is stuffed with cooked ham and cheese , is passed through egg and breadcrumbs , and fries in hot oil. This delicious recipe has become a classic of international cuisine thanks to its unique flavor and its easy preparation.
It is a simple and very versatile recipe - which disputes its origin between Switzerland and France - since it admits different variations in terms of the type of meat, the ingredients of the filling and accompaniments. But always maintaining the empanado or batter structure, and frying.
History and origin
There are different voices in relation to the origin of Cordon Bleu. A version says that it was created by French chefs who worked in the prestigious cooking school "Le Cordon Bleu" , founded in Paris, France, in 1895 by a group of chefs and cooking writers.
The name "Le Cordon Bleu" means "the blue ribbon" in French, and began to be used in the 16th century, during the reign of Enrique III, to refer to culinary excellence. This name refers to the blue ribbon that was traditionally used to distinguish the gentlemen from the order of the Holy Spirit.
Another version indicates that Cordon Bleu was created by a Swiss chef named Fredy Girardet in the 1940s. Girardet would have created the dish as a tribute to the order of the Cordon Bleu , which we mentioned earlier.
What differences do you have with the recipe for cachopo?
Many times the Cordon Bleu is confused with the cachopo , a typical dish of Asturian cuisine that is also made from a piece of battered meat and stuffed with ham and cheese.
However, the main difference between the two lies in the type of meat used: while the Bleu cord is traditionally made with chicken , the Asturian cachopo is done with beef or pork .
You can also find similarities with flamenquines , which are prepared in a similar way, but with veal meat and serrano raw ham. Or even with the classic milanesas we eat in Argentina, which although they do not always carry ham and cheese, they are prepared very similarly, either with chicken or veal.
What types of Cordon Bleu exist?
The classic recipe is made with chicken, but you can find variants:
- Pork : It is a more juicy and tasty option than the chicken variety, although it is also a bit heavier.
- Turkey : It is a healthier and low -fat option than the veal or pork variety.
- Of vegetables : For those who prefer vegetarian or vegan options, a cordon bleu can be made using vegetables such as eggplant, or spinach leaves. The filling can vary, but cheese, tofu or mushrooms are generally used.
- SALMON : It is a more elegant and sophisticated option than meat varieties. Instead of battered meat, salmon is used and the filling is prepared with cream cheese and dill. It is an ideal option for special occasions.
Garrisons to accompany the chicken cordon
In general, any accompaniment that combines well with chicken meat, ham and cheese is a good option to accompany the Bleu Cord. Here we suggest some to give you ideas that complete the dish.
- Salad: A fresh salad is an excellent option to accompany the Bleu Cord. You can choose a green salad with lettuce, spinach, arugula, tomato and cucumber, or a roast vegetable salad such as eggplants, zucchini and peppers.
- Paved of potatoes ( potatoes ): a classic accompaniment for many meat dishes.
- Rice: A portion of white or integral rice is also a very good option to accompany the Cordon Bleu. You can add some sauteed vegetables or a sauce to give more flavor.
- French fries : French fries are always a good accompaniment and this is no exception.
- Steamed vegetables: vegetables such as broccoli, carrots and cauliflower are an excellent option for a healthy garrison .
