About the flags

Salachicha flags are a tasty creation that is enjoyed a lot in Mexico, which combines homemade chicken sausages with a soft mass of corn and wheat flour, which is served in skewer sticks. A practical and funny snack or bite, ideal to share in family and birthday gatherings, such as the panchuques we find in Argentina.

His name evokes festive images and bright colors, especially when they are bathed with dressings such as ketchup and mustard, which is the usual way in which they are served in Mexico, and are also supported by a skewer stick, as if they were a flag.

The origin and history of Mexican flags

This snack arose as an adaptation of the CORN Dog , which is at the same time inspired by the CORN Dog Korean, originally from South Korea, whose name in that country is Hattogu .

In South Korea the CORN Dog became popular in the 80s, moment of boom of the hot dogs worldwide. This creation, which is prepared with a sausage covered in a spongy dough, and that can be combined with cheese or other ingredients, was adopted in other countries, such as in Mexico.

Throughout history, they have become a very popular appetizer in Mexican cuisine, especially in celebrations such as Independence Day, National Holidays and Sports Events, thanks to its versatility and practicality.

How to make sausage flags

The preparation of the recipe is very simple and is done quickly. First, sausages are placed in a meat skewer , which is thick enough to hold it.

Then, sausages (which can be homemade) are immersed in a semi -liquid mass that mixes corn flour , wheat and other ingredients; and are fried in hot oil until they are golden and crispy.

The result is a perfect mixture of flavors and textures, with crunchy outside and the soft interior of the sausage. It can be seasoned with mustard and ketchup, or customize with additional ingredients, such as cheese, chiles, and even a touch of guacamole.

The mass for flags and the choice of flour

The mass is a fundamental part of this recipe. To obtain flour for flags , cornmeal is mixed, which gives it a characteristic taste, more adhesion and crunchy texture; and wheat flour, which adds elasticity to the dough.

The preparation of the dough involves mixing the flours with milk, egg, salt and baking powder. The resulting mass must be soft and no lumps to cover sausages easily.

Condiments can be added to play with flavors, such as Curry or Chile powder, and serve accompanied by crispy fries .

4 tips to prepare Mexican flags

  1. Perfect mass: The mass for the flags has to be smooth and without lumps. For that it is important to first mix liquid ingredients and then add the solids little by little. You can leave at rest a few minutes before using, so that it settles and adheres better.
  1. Oil: The oil must be very hot at the time of frying, but it is better to lower the heat a bit when placing the flags , to prevent them from burning on the outside and are raw inside. It is important to renew the oil if they are made in quantity.
  1. Creative fillings: in addition to sausages, you can add cheese, jalapeños or even refredo beans to vary the taste. The sausages can be cut and alternate with different ingredients in the skewer stick.
  2. The crispy touch: After passing through the dough, the sausage flags can be passed with Panko, crushed flakes or even bits of corn tortillas, before frying, to give it a texture well crunchy!.
