Welcome to Paulina Cocina! Today we have a recipe I love! Completely gluten-free rice tortilla dough! Rice is one of the most incredible things in the world. We can definitely get a lot more out of it than making it overcooked with tuna at camp, and stop reducing it to something we eat with either chicken or butter and cheese.

I know a lot of people think that about rice. But luckily, there are recipes like this rice tortilla that debunk those myths. If you think I'm going to make a tortilla with cooked rice, get off this channel right now! It's not nonsense . No, sir, this rice tortilla is more like the dough for a fajita or a taco than a tortilla you make with whatever's left in the fridge on a Sunday night.

First things first, you can make this rice tortilla recipe with any rice you like. The only rice we don't recommend is rice that's never overcooked, because we want it to release its starch, and that does just the opposite.

But other than that, you can make the tortilla with yamaní rice, as in this case, with brown rice, white rice, black rice, whatever you like! Each rice brings something unique to the tortilla. I like the ones with yamaní the most because it's one of the tastiest rices and has a very good texture.

The best thing about this rice tortilla recipe is that once you have the liquid, you can put it in a small bottle or an airtight container and keep it in the fridge for a few days. They come home with a couple of vegetables, take the mixture out of the fridge, make some delicious rice tortillas, fill them, and open a beer in my honor.

Rice tortilla recipe

  1. Place the rice in a bowl and cover with water. Refrigerate overnight (at least 2 hours).
  2. Once the water has been absorbed, we remove most of the liquid, leaving a little.
  3. Blend with a mixer or blender. If it's too thick, you can add a little water. It should be a sort of cream. It's clearly visible in the video.
  4. Add salt and mix. You can add more seasonings if you like.
  5. In a hot frying pan with olive oil, add a little of the preparation and cook well on both sides.
  6. You can make them thinner like burritos for filling, or thicker like tortillas to accompany meals.
  7. Extra: you can put the cream in a small bottle and keep it in the refrigerator for when you feel like eating these pancakes, it will last about a week!

The other day I saw your cooking pouf video. My father, Isaac Weisswein, and my mother, Perla Tabac, taught my children and me a way to keep food warm, and then I found out it also cooked. I don't know about beans, but for example, when the rice starts to boil, wait two minutes, turn off the heat, and then place the pot covered with maaaany sheets of newspaper. Seal it tightly and wait (sorry, I don't know how long, but about an hour). I also tried it with stew and it worked well. Trial and error.

It really changed my life! I add turmeric and pepper... And when I want to fill up or need more protein in my dish... I mix in a beaten egg and they become a soufflé!
