Like many other gastronomic creations, this dessert also has a mythical history that supposedly gave rise to this Mexican delight. This story is linked to a nun from the Jérica region, Spain, who worked in a hospice of children in Jalisco, Mexico, during the nineteenth century. 

The nun was looking for ways to provide small tasty and nutritious dishes. With creativity, he began experimenting in the hospice cuisine. This is how he devised a mixture that included simple but essential ingredients: eggs, milk, sugar, vanilla and cinnamon , similar to those of flan and homemade custard .

During one of its tests, in a distraction or error in cooking time, the upper part of the dessert was accidentally burned. The nun decided to try it and discovered that that burn gave her a distinctive and rich touch to her dessert, which became a fundamental part of the final recipe of the jerichalla .

The truth is that the Jericayas recipe does not have much mystery , its ingredients are very similar to those of a flan or a crème brûlée. Milk is the basis of dessert and provides its soft and creamy texture. Yields: 4 portions

Preparation time: 45 minutes

Ingredients

  • 4 cups of milk
  • 6 eggs
  • 1 cup of sugar
  • 1 teaspoon vanilla extract
  • 1 cinnamon branch

How to make jets step by step

  1. Preheat the oven at medium-high temperature and place hot water on a large tray for the water bath.
  2. In a pot heat the milk with sugar, vanilla and cinnamon branch. Mix to dissolve the sugar. As soon as you boil, remove from heat and let cool.
  3. Beat the eggs slightly and incorporate the milk (without the cinnamon branch), integrating. Pour the mixture into individual molds for jums.
  4. Place the molds in the bathroom tray, covered halfway with water and bake for approximately 40 minutes or until the jéltras are golden on the surface and firm to the touch. 
  5. Remove from the oven and let cool to room temperature before cooling for at least 2 hours.
