About this Mazapan recipe

The origin of this recipe is in debate and we will not discuss it. In the research on the history of Mazapan we gave ourselves that there is a great dispute between the French, the Italians, Arabs, Greeks and Spaniards, all demand the invention of this peculiar sweet and that is why there are different "truths" about their origin. 

We find four places considered as the most famous in the elaboration of Mazapan:

  • Two in Spain: Toledo, in the province of the same name and Soto, in La Rioja.
  • And two in Germany: Lübecker and Königsberger.

It is important to maintain refrigerated mazipan, wrapped in film paper and consume in a maximum of three days . The biggest problem is that it is very dry, then be careful with this.

How to make almond flour

We already have almost everything ready, before we finish we see the theme of the almonds that yes or if they are ground. How is this done? Well you can buy like this or do the process that I detail below:

  • Peel the amount of almonds you want and if they are not peeled (the pass 1 minute x boiling water and then the skin goes out alone). Although it can also be done with the shell.
  • Then we put the almonds peeled in a pan with nothing else and we carry over medium heat stirring, for about 7 minutes. The idea is not to toast them but simply brown them so that they are very dry and then not form a paste. This step can also be done in the oven.
  • Let cool. Never crush before cooling since, again, a paste will be formed.
  • Once cold, crush until you get the flour.

Is it essential to grind the almond at home? Of course not. But the result is better, grinding raw almond always results in a cooler and more flavor.

Ingredients

  • 200 g. of ground almond.
  • 200 g. of impalpable sugar.
  • 1 egg

How to make homemade mazipan step by step

  1. In a processor or blender place the almond and impalpable sugar. This step is optional but helps to have the most refined almond. Then go through a strainer to sift.
  2. Place the almond and sugar mixture in a container. Add the egg white and mix very well, finish joining with your hands.
  3. Take the dough to the table, knead and give it the desired shape. Then accommodate them in a source on baking paper.
  4. At the top brush each with a little whipped yolk and introduce into the preheated oven and in the high half of the oven.
  5. The temperature in maximum for baking and controlling, 2 or 3 minutes. When they are brown over the oven and serve.
