This Sunday's class was about how to use up leftover chicken. You know: the old trick of putting a chicken on the grill on Sunday and then using it for other meals throughout the week.
Mirta, the teacher, said we should brainstorm recipes to use up cooked chicken. Most of my classmates leaned toward chicken salads, but I came up with " chicken pot pie ."
The teacher immediately gave me a look. I thought she was going to give me another lecture on using English terms, but no. She just said, " Let's call it 'chicken pie .
He invited me to talk about the dish. "Well," I said, " it's a typical American recipe, from the South ."

The thing is, the teacher chose my recipe out of all the others for us to make at home. She said that since it was from Yankilandia (that's what she said: Yankilandia), we should each add our own local touch.
I made the holes in the lid with the mate straw, as shown in the photo. I got a 10 for the recipe, but a classmate won by drawing Camilo Cienfuegos with vegetable ink. The teacher loved it.

Regardless of what you want to call it, this recipe is a marvel for dinners or lunches and making you look like a champion.
I made them with chicken breasts, but the idea is that you can use leftovers, like a salt-baked chicken, for example. It's delicious with grilled chicken.
Even if you don't have leftover chicken, you can make it anyway and I'll even tell you how to cook it.
In the recipe I'm leaving you, I made everything in a large pot, although you can also make it in individual molds. You get 4 nice portions.

Ingredients
for 4 servings or 1 large cake
- 2 chicken breasts
- 1 carrot
- 3-4 leeks
- Onion 1
- 1 garlic clove
- cooked fresh peas or 1 can of peas
- 1 tbsp. butter
- flour 1 tbsp.
- 1 glass of milk
- 1 splash of cream (optional)
- 1 pie crust
- 1 tsp. oregano tea
- Salt and pepper

- Chop the onion and garlic. Slice the leeks. Chop the carrot into small pieces. Sauté these vegetables in 1 tablespoon of butter for 2-3 minutes.
- Add the diced chicken: If it's cooked, sauté for 2 more minutes. If it's raw, cook until golden brown, about 5 minutes.
- Add the peas and season with salt and pepper. You can also add corn kernels (in this case, half a can and half a can). Stir until the peas are heated through. Season with salt and pepper and sprinkle with oregano.
- Sprinkle with the tablespoon of flour. Stir over medium heat for 2 minutes. This allows the flour to cook and lose its raw flavor.
- Warm the glass of milk in the microwave. Add a few drops of milk to the mixture and stir. The famous béchamel sauce will form on the spot. Gradually, use up the entire glass of milk. The mixture will be creamy. Add a splash of heavy cream, if you use it, and mix in.
- Roll out the dough on the counter and poke holes in it with something small. It can be a pastry cutter, or anything you can find. I did it with a mate straw, but you can use larger holes.
- Place the mixture in a deep baking dish or individual molds and cover with the perforated pastry. Secure the dough by pressing down on the sides.
- Bake until the pastry looks golden brown and serve.
