Preparation time : 4 hours
Ingredients
- 2 cups of beans pintos or berries (previously soaked)
- 150 gr of sausage
- 100 gr of bacon
- 1 large onion
- 2 Jalapeños or Serranos chiles
- 2 medium tomatoes
- 3 garlic cloves
- 1 Epazote twig
- Salt to taste
- Water
- Vegetable oil
5 steps to make the best charros beans
- In a large pot, cook the beans in enough water to cover them until they are tender. This can take 1 to 2 hours.
- In a separate pan, cook the bacon until golden and crispy. Then, withdraw and reserve. In the same pan, cook the sausage. Then, withdraw and reserve.
- Add some oil and sauté the onion, chiles and chopped garlic until golden brown. Add chopped tomatoes and cook for a few minutes until they soften.
- Add the mixture of onion, chiles, garlic and tomatoes to the pot of beans. Mingle. Add the chorizo and bacon cooked.
- Throw the Epazote twig and let all the ingredients cook over heat 15-20 minutes. Salar to taste. Serve hot char beans.
