Movies insist we associate the mafia with a love of food. I remembered it today while chopping garlic. Here's this calamari casserole , with a mafia (and love) signature.
Ingredients
For 2 people

- 2 clean squid tubes
- 1 purple onion
- 1/2 red bell pepper
- 1 garlic clove
- 1/2 glass of red wine
- 1 glass and a half of water
- 1 tomato
- Laurel
- Sweet paprika
- Chopped ciboulette
- Salt, pepper and olive oil
- 2 potatoes
Recipe for squid casserole in red wine
make it look like an accident
- First, we'll place the squid, already cut into strips or rings, in the pot with a little oil. Sauté them for about 5-7 minutes. This is to release some of the water, which would otherwise interfere with the sauce in the squid casserole. Remove from the pot and discard the water.
- Onions and bell peppers, roughly chopped, just like that, into large chunks. Sauté them in the same pan with olive oil. Add the garlic too, but cut it like Paul Sorvino from Goodfellas, really fine.
- Add the squid back in along with the peeled and chopped tomato. Sauté a little longer.
- Now add the wine, water, bay leaf, paprika, and season with salt and pepper. This cooks for about 20-30 minutes. The sauce turns red when it turns dark, blackish.
- Once it's done, let it rest for about 15 minutes. Serve with boiled potatoes and sprinkle with chopped chives.
Note : To serve it like the photo, place the potatoes first, then serve the squid and sauce in the center, being careful not to touch the potatoes on top. This way, the sauce appears underneath but doesn't cover them.
