The Yakimeshi is a traditional Japanese dish that prepares with fried rice mixed with vegetables, egg and sometimes meat or seafood. The word "Yakimeshi" comes from Japanese and is composed of two words: "Yaki", which means "grilled" or "grilled" , and "meshi", which means "rice . Therefore, the word "Yakimeshi" can be literally translated as "grilled rice."

What kind of rice use in this recipe

Glutinous rice is the type of rice that is used in most Japanese dishes, since it is easier to mold and maintain its shape when it is cooked. If you don't have a glutinous rice, nothing happens, you can also use other types of rice such as:

  • Japanese short or long grain rice , anyway it is a good option to cook Yakimeshi since it is soft and humid.
  • Basmati rice, as a dry and less glutinous option. If you use Basmati rice, it is advisable to cook it with a proportion of 2: 1 of water to rice and let it stand for a few minutes before skipping it with the rest of the ingredients.
  • Californian glutinous , this is a short and round grain rice, which gives it a soft and humid texture, ideal for cooking Yakimeshi.
  • Thai glutinous rice is another option that can work for us, since this type of rice has a long and thin grain, also for high humidity and is rich in starch, which makes it ideal for cooking dishes that require glutinous rice, such as dumplings, rice cakes and sushi.

Attenti: It is important not to confuse glutinous rice with glutinous glutinous rice, which is a type of rice that is used in sushi and is not suitable for Yakimeshi.

Chicken Yakimeshi

Ingredients

  • 2 cups of glutinous rice.
  • 2 cups of water.
  • 1 cup of chicken cut into cubes.
  • 1 cup of onion cut into small cubes.
  • 1 cup grated carrot.
  • 2 beaten eggs.
  • 4 tablespoons of soy sauce.
  • Olive oil or vegetable oil to saute.
  • Salt and pepper to taste.

How to prepare chicken yakimeshi

  1. In a pot, cook the rice and let cool.
  2. Heat a pan with a little oil over medium-high heat. Add the chicken and saute until it is cooked and golden on both sides. Reserve.
  3. In the same pan, add a little more oil and sauté the onion and carrot until they are soft.
  4. Add the chicken to the pan and mix well with the vegetables. Add the soy sauce and stir to cover all the ingredients.
  5. Add the cooked rice to the pan and mix well with the other ingredients. Let the rice heat and cook slightly.
  6. Add the beaten eggs to the pan and stir well to mix with the rice and the other ingredients.
  7. Season with salt and pepper to taste. Serve hot.

Yakimeshi of vegetables

Ingredients

  • 2 cups of glutinous rice.
  • 4 cups of water.
  • 1 medium onion.
  • 1 medium carrot.
  • 1 cup of peas.
  • 1 cup of spinach.
  • Green onion.
  • Sesame oil.
  • Sesame oil.
  • Soy sauce.
  • Salt and pepper to taste.

How to make vegetable yakimeshi

  1. Cook the glutinous rice with 4 cups of water in a pot over medium heat until the water has evaporated and the rice is soft. Let the rice cool.
  2. Save the onion, carrot and peas in a pan with a little sesame oil. Add the spinach and continue to skip for a few more minutes.
  3. Add the rice cooked to the pan and mix well with the ingredients. Add soy sauce and sesame oil and mix again. Season with salt and pepper to taste.
  4. It serves the Yakimeshi of hot vegetables and decorate with green onion above.

Mixed or special yakimeshi

Ingredients

  • 2 cups of glutinous rice.
  • 4 cups of water.
  • 1 cup of chopped chicken.
  • 1 cup of peeled shrimp.
  • 1 medium onion.
  • 1 medium carrot.
  • 1 cup of peas.
  • 1 tablespoon of sesame oil.
  • 1 tablespoon of sesame oil.
  • 1 tablespoon of soy sauce.
  • Salt and pepper to taste.

How to cook Mixed Yakimeshi

  1. Cook the glutinous rice with 4 cups of water in a pot over medium heat until the water has evaporated and the rice is soft. Let the rice cool.
  2. Save the chicken and shrimp in a pan with a little sesame oil. Add the onion, carrot and peas, continue to skip over medium heat until the vegetables are cooked. 
  3. Add the cooked rice to the pan and mix it well with the ingredients. Add soy sauce and sesame oil and mix it again. Season with salt and pepper to taste.
  4. The hot yakimeshi serves.
