Ingredients

  • 1 onion
  • ½ Mryrd
  • 1 big garlic clove
  • 2 tbsp. Of tomato puree (or 1 grated tomato)
  • 2 envelopes (4g.) Calamar ink
  • ¼ of squid fins
  • 1 cup and a half of rice
  • 2 and a half cups of broth (it can be water + broth: how to make homemade broth cubes)
  • Salt, pepper and oil

How to make black rice with squid

1. Place the squid, cut into pieces with a little pan. Brown a little, about 5 minutes.

2. Add to the pan (even with the squid inside), onion, chopped bell and garlic. Sauté until the onion is transparent.

3. Add the wine jet and leave a couple of minutes, until it stops the smell of alcohol.

4. Consult now the puree of tomatoes and cook a couple more minutes.

5. Add the rice and remove until golden.

6. Incorporate the squid ink. Stir up well.

7. Add the broth and stir until you see the ink well distributed. From now on we will not stir it anymore until the end. Do not worry if you do not see it so black at this stage, it will darken when the water goes away.

8. Cover the pot until it boils. When you see that it is boiling (it happens fast, in about 2 minutes), uncover and lower the heat.

9. Cook uncovered until the rice has absorbed all the water.
