Traditional rice stew (with meat)
Ingredients
- 350 gr of meat (it can be buttock, square, quadrile ...)
- 250 gr of rice
- 1 sausage
- 1 medium onion
- 1 medium red meor pepper
- 2 garlic cloves
- 1 carrot
- 1 can of puree of tomatoes or 3 crushed tomatoes
- Laurel, paprika, oregano, thyme
- Salt
- Pepper
- Olive oil
- Water or broth, necessary amount
How to make traditional rice stew
- Cut very small vegetables, flesh into cubes and misfortune the sausage (it can be boiling it or in a pan directly)
- In a pot place a splash of olive oil and add the garlic, take to fire and when it is very hot to add the meat cubes. Brown all the faces of the flesh.
- Add the vegetables and lower the fire a bit, when they are transparent add the sausage in fine fetas and let everything join well.
- Add the puree of tomatoes, season and add the laurel and herbs to taste. Once the sauce changes color (a few minutes later, it puts a more embroidered tone) add 2 cups of water. They can use broth if you prefer, or add a waterfro release of water.
- When it boils to add the rice and cook it normally. Using the fire at least does not stick.
- Cook until the broth is almost completely consumed. At this point the rice will be at the dente, so if they like it, they already withdraw from the heat. In the event that they prefer well soft rice and integrated to the sauce, add a little more water or broth and cook with lid until it has the desired point.
- Once cooked, let stand for a few minutes and place. It can be served with a little ciboulette or parsley scattered over and a good pancito to accompany!
Alternative: Vegan rice stew
Ingredients
- 1 onion
- 1 red bell pepper
- 1 carrot
- 200 gr of rice
- 200 gr of fresh or frozen peas
- 3 medium tomatoes
- 1 eggplant
- 2 garlic cloves
- Laurel, oregano, thyme.
- Paprika, pepper, salt
- Olive oil
- Water or broth, necessary amount
Vegan rice stew recipe step by step
- Cut the vegetables into small cubes and saute in order. First the vegetables that are harder and so on! The idea is that they all have a couple cooking. At the end of all add the crushed tomato, cook until the tomato becomes darker.
- Add the rice and fry until it has a translucent tone, but does not brown. Add water or boiling broth and the peas.
- Condition to taste, put a minimum and cover. Cook until they are looking at!
- By serving you can accompany it with chopped ciboulette and voila! Enjoy it!

Here in Mexico the rice with meat is not cooked, it is usually with vegetables, pea (pea), carrot, spinach, but I will do it with meat and we will see how it looks.
