Although I know that many people are looking for more classic flavors, the recipe that reminds them of childhood and flavors of the family. That is why I leave some key points to get the original and unique flavor of the classic enchiladas:

  • The first point to consider is that they must be made with corn tortillas . It is also important that the tortillas have a soft and flexible texture to make them get rid of them at the end .
  • The second is cheese, which is an important ingredient in Mexican enchiladas , either in the filling or as coverage.

The typically used cheese is fresh cheese or white cheese , but you can also use cheddar or mozzarella cheese .

  • Garrons : Often with garrisons such as sour cream, chopped onion, coriander, avocado, lettuce and tomato.
  • The classic filling is variable, because enchiladas can be filled with a wide variety of ingredients, such as shredded chicken, ground meat, beans, cheese or vegetables and will be fine. The filling is usually seasoned with spices and characteristic herbs.

  • To make red enchiladas, we first have to toast and grind the dry peppers to create the sauce.

The recipe is very simple and does not require much preparation time. 

  • To make them first, we cook the chicken until it is tender and gold. 
  • Then, mix the chicken with the red sauce and fill the corn tortillas. 
  • Finally, the enchiladas are placed on a plate, cover them with more sauce and grated cheese before serving.

Classic enchiladas recipe

Preparation time : 50 minutes

Yields: 4 portions

Ingredients

  • Guajillo chiles 
  • Width Chile 
  • Corn tortillas
  • 1 white onions
  • Salt and pepper
  • Spoiled pork or chicken meat 
  • 2 garlic cloves
  • Fresh cheese
  • Dehydrated or fresh oregano.
  • Vegetable oil

Ingredients for garrison (which is optional)

  • Cooked potatoes.
  • Lettuce or cabbage
  • Rabies
  • Precooked carrots
  • Cheese 
  • Onion

How to prepare Chile's sauce

  1. Slightly toast the chiles careful not to burn them. (This step takes only a few seconds on each side).
  2. Once roasted, place them in a saucepan with water and cook for 15 minutes over low heat, or until they are soft. 
  3. Remove the pot from the fire and let the chiles cool for 15 minutes. 
  4. Once cold drain and strain. Place in a mixer or blender along with garlic cloves; Add ½ cup and liquefy until you get a soft sauce. (If the sauce is very thick or the chiles do not mix well, pass it through a fine strainer). 
  5. Season with oregano, salt and pepper. Reserve.

How to make Mexican enchiladas step by step

  1. Preheat the oven at 180 C °. 
  2. Put to heat two pans. Add, in a pan the 4 tablespoons of vegetable oil and heat over medium heat. In the other heating the Chilean sauce for 5 minutes.
  3. With the oil already hot, fry the tortillas on both sides (this only takes a few seconds). Then place the enchiladas on a plate with napkins to remove the excess oil they had left.
  4. Submerged the tortillas one by one in the Chilean sauce until both sides get wet well. And reserve them in a new source, stacked.
  5. To serve, first place the filling in the center of the tortilla (cheese, onion, lettuce, etc.) and then roll slowly, slowly not to break.
  6. Sprinkle the enchiladas with the cheese above, you can add any other garrison if desired.
