Ingredients

  • 400 gr of condensed milk
  • 400 gr of evaporated milk
  • 4 egg yolks
  • 4 egg whites
  • 1 cup of sugar
  • 1/4 water cup
  • 1 cup of sugar for merengue

Simple preparation of Lima sigh

  1. In a blender, mix condensed milk, evaporated milk and egg yolks until you get a homogeneous cream. 
  2. Pour in a low fire and cook 20-25 minutes, stirring constantly, until the mixture thickens. Remove from heat and reserve.
  3. In another saucepan, cook sugar and water over medium heat until you get a thick syrup.
    ⚠️ It is important that the syrup reaches a temperature of 118-120 ° C before removing it from the heat. This pasteurizes the whites when pouring it, ensuring a safe and perfect meringue. If you don't have thermometer, you will know that you are ready when it forms a firm thread when you fall.
  4. Beat the egg whites to the point of snow in a large bowl. Pour hot syrup into thread on clear beaters while continuing to beat until the mixture links.
