Ingredients for 2 or 3 servings

  • 1 pork tenderloin.
  • 2 medium onions.
  • 1/2 tablespoon of mustard (I used old-fashioned mustard).
  • ½ glass of water.
  • 1 bay leaf or 1 sprig of thyme or 1 sprig of rosemary.
  • 1 can of beer, it can be blonde or dark, they look great!
  • Salt.
  • 1/2 cup soy sauce.
  • 2 tablespoons of olive oil.
  • 2 cloves of garlic, finely chopped.
  • Lemon zest.
  • 1 tablespoon of honey.
  • Two ginger medallions. They can also be grated.
  • 1 tablespoon of brown sugar (if you don't have brown sugar, use regular sugar).
  • Pepper.

How to prepare pork tenderloin in beer sauce

  1. Cut the two onions into julienne strips and sauté in a medium saucepan with a splash of oil until translucent. Set aside in a bowl.
  2. Season the pork tenderloin with salt and pepper and brush with mustard. Place the pot in which the onion was cooked over high heat with a good splash of oil and brown the tenderloin on both sides. Add the reserved onions to the sides.
  3. Top with the can of beer, soy sauce, half a glass of water, bay leaf, honey, ginger, finely chopped garlic, brown sugar, and lemon zest.
  4. Cover the pot and cook for 30–35 minutes. (It's important to keep the heat on medium to prevent burning on the bottom.)
  5. After the time has passed, turn off the heat and let it rest for 10 minutes before serving.

I wouldn't add cherries. It turned out too sweet and much redder than the photo, and it didn't look appetizing.
