For movie-style popcorn with golden brown caramel, there's a master technique that will ensure you get it right every time. It's a secret they teach you when you enter the Citadel of Sweet Secret Popcorn . A Master invented it a thousand years ago. But I'm telling you because I'm in favor of the democratization of popcorn.
Yes, I said popcorn, because this food has more names than Danerys Targaryen: Popcorn, popcorn, popcorn, popcorn, popcorn, popcorn. It seems the beginning with a P is very important. But the most important thing is that you don't miss out on learning how to make homemade popcorn (or homemade popcorn, or popcorn, or a long etcetera).
Ingredients for sweet popcorn

Basic steps for cooking popcorn:

- Add a good splash of oil
- Cover the pot (You should already know this, but prevention is always better than cure: covering the pot is very important, because the corn explodes and jumps when it turns into popcorn. If you don't cover the pot, the kitchen can become a minefield...)
How to make sweet popcorn
With sugar and cinnamon
The recipe for sweet popcorn is very simple: once we see it's cooked, turn off the heat and immediately add the sugar and cinnamon. We cover the pot again and, holding it, we swirl it around so that the ingredients mix. The residual heat melts the sugar slightly (without turning into caramel) and sticks to the grains along with the cinnamon.
Then we take them out of the pot and our first sweet popcorn recipe is ready.
How to make caramel for sweet popcorn
To achieve this effect, you need to start a little early. The caramel for popcorn is the same as the caramel for flan . In the pot where we're going to make the popcorn, before adding the popcorn, we'll make a circle of sugar around the edges of the pot's bottom, leaving an empty space in the middle. Then, we'll add a small pile of popcorn and, on top of that, a splash of oil. We cover the pot and wait for the popcorn kernels to begin popping. What will happen is that the sugar will turn into caramel and mix with the popcorn as it pops. Once all the kernels have popped (be careful not to burn the caramel), remove it from the heat and it's ready. Be very careful, as hot caramel is very hot!
It's just like the sweet popcorn at the movies!
With chocolate
While our popcorn is cooking in the pot, we're going to melt some chocolate bars in the microwave.
Once we see that the popcorn is cooked, we turn off the heat and immediately add the chocolate. We cover the pot again and, holding it, we'll swirl it around so that our ingredients mix. The residual heat will help the chocolate stick to the popcorn kernels.
Then we take them out of the pot and these sweet chocolate popcorn will be ready to serve!
Salted popcorn recipe
With Parmesan and thyme
Once we see that the popcorn is cooked, we turn off the heat and immediately add the grated Parmesan cheese and thyme. We cover the pot again and, holding the lid, we shake it so that our ingredients mix. The residual heat melts the cheese and absorbs the flavor of the thyme.
Then we remove them from the pot and our salted popcorn is ready to serve.
Salted popcorn with Galician garlic sauce
In a frying pan, heat a coarsely chopped garlic clove with a generous amount of olive oil. After a few minutes, add a generous spoonful of paprika. Stir until well combined and remove from heat.
When we see that the popcorn is cooked, we turn off the heat and immediately add the garlic mixture we made. We cover the pot again and, holding it, we shake it so that our ingredients mix, and with the residual heat, the oil adheres well. Add a pinch of salt.
Then we take them out of the pot and they're ready. Remember to remove the large pieces of garlic when you serve the salted popcorn, because it's amazing.

Hi Pau, have you heard of Garret's popcorn in the US? There are some that are literally little crispy golden sweet balls with popcorn inside... I don't know exactly how they make them... just in case you know.
