Picadillo soup recipe

Yields: 4/6 portions

Preparation time: 1 hour and 30 minutes

Ingredients

  • 2 breasts or 3 chicken thighs
  • 1 chicken housing 
  • 2 leeks
  • 2 Carrots
  • 1 ham bone
  • 100 g of serrano ham in cubitos
  • 2 hard eggs
  • 100 - 150 g Fine or rice noodles (at ease)
  • Salt to taste
  • Water (2 liters approx)
  • Parsley to decorate (optional)

How to make minced soup in 6 steps

  1. In a pot, place the breasts or thighs, along with the ham bone, the wells well washed and cut in half and the carrots peeled and cut in half. 
  2. Cover everything with water and cook over medium heat until it boils, then lower the heat, add salt to taste. Cook about 1 hour, taking out the foam that forms on the surface. 
  3. Once the broth is ready, remove the chicken, the bone and the vegetables and strain it. Shit the chicken, remove all possible meat from ham bone and cut vegetables into small pieces. Reserve.
  4. Take the broth to the pot again and cook the noodles or rice in a regular basis, according to the package instructions (usually between 8 and 12 minutes).
