- 4 medium zucchini
- 500 gr of minced meat (it can be beef, pork or chicken)
- 1 chopped onion
- 2 chopped garlic cloves

- 1 grated carrot
- 1 chopped tomato
- 1 cup of cooked rice
- 1 teaspoon of cumin powder
- 1 teaspoon of sweet paprika
- Salt and pepper to taste
- Olive oil necessary quantity
- Grated cheese
How to make zucchini stuffed with baked meat
- Preheat the oven to 180 degrees and cut the zucchini in half throughout. Gently empty the pulp with a spoon, leaving an edge of approximately half a centimeter. Reserve the pulp extracted.
- In a large pan, heat a little olive oil over medium heat. Add onion and garlic, and cook them until golden and fragrant.
- Add the red pepper, grated carrot and chopped zucchini pulp. Cook for a few minutes until the vegetables are tender.
- Add the minced meat to the pan and cook until it is well golden and cooked. Undo the meat lumps with a wooden spoon while cooking.
- Add the chopped tomato, the cumin powder, the sweet paprika, the salt and the pepper. Cook for another 5 minutes for flavors to mix.
- Remove the pan from the heat and add the cooked rice. Mix all ingredients well.
